Meat Mixers 


A quality meat mixer reduces the time you spend mixing your jerky or incorporating sausage ingredients, which speeds up your process time. We offer three meat mixers that can each be powered manually. Optionally, our 25 and 50 pound capacity mixers can be powered electrically by attaching them to an LEM meat grinder. 


The LEM meat mixers are constructed of heavy duty stainless steel, which sets them apart from most others on the market that are made of thin metals that will flex and eventually break. LEM meat mixers are built to last for years of heavy use.


LEM 20 LB Meat Mixer: This lightweight, manual mixer weighs only 12.75 pounds. The mixing tub measures 11"L x 8.75"W x 11"H. The capacity of this meat mixer is 20 pounds of meat. 


LEM 25 LB Tiltable Mixer: This mixer can be powered manually or connected to any LEM grinder of 0.35 horsepower or higher made after 2002. The unit weighs 33 pounds, the tub measures 11"L x 10.25"W x 13"H, and the capacity is 25 pounds of meat.


LEM 50 LB Tiltable Mixer: This mixer can be powered manually or connected to any LEM grinder of 0.75 horsepower or higher, made in 2002 or later. It weighs 39 pounds, the tub measures 14"L x 11"W x 14"H, and it has a capacity of 50 pounds of meat.


Scales 


Use the  Stainless Platform Scale to weigh up to 44 pounds (20 kg) of meat in 2 oz increments. The scale has both pound and kilogram markings to best suit your needs. The scale itself weighs only 5 pounds. The gambrel LEM recommends for use with hanging scales is the  LEM Rope Hoist and Gambrel.

Sausage Stuffer Accessories 


LEM Stainless Tubes for 5 lb. Sausage Stuffer: These stainless steel stuffing tubes are 1 - 9/16” diameter at the base and are available in 3/8”, 3/4”, and 1” inner diameter. They will fit on a 5 pound vertical sausage stuffer. 


LEM Stainless Tubes for 15 lb. Sausage Stuffer: These stainless steel stuffing tubes will fit a 15 pound vertical sausage stuffer. They have a 2 inch base diameter and is offered in a 5/8”, 1”, and 1 - 1/4” inner diameter. 


Non-Edible Casings 


LEM Non-Edible Fibrous Casings: Fibrous casings are perfect for bologna, salami, summer, sausage, and other cured sausages. These casings are non - edible paper pulp material and come in clear or mahogany. Additionally, the mahogany casings may also be purchased printed with "Venison Sausage - Not for Sale.” These casings are available in 1, 3, and 5 pound capacities in a variety of quantities. There is also a classic red bologna jumbo casing available in a 7 pound capacity. 


LEM Non-Edible Collagen Middle Casings: These collagen middle casings eliminate wrinkles because they shrink with the meat. The casings come in clear or mahogany. Additionally, the mahogany casings may also be purchased printed with "Venison Sausage - Not for Sale.” These casings are available in 1.75, 2, and 3 pound capacities in a variety of quantities. 


LEM Non-Edible High Barrier Casings: Casings made from a nylon poly blend allow you to make sausage in around 2 hours. These casings are easy to use and great for those just starting out. Soak these casings for 30 - 60 minutes in cold water beforehand. These casings come in cream or gold and 1 1/2" x 5" or 2 1/2" x 20.” They can be hung in a smoker, boiled in water, or cooked in an oven. These case cannot be used with citric acid. 


Edible Casings 


LEM Edible Collagen Casings: LEM Edible Collagen casings are made of beef protein and take the place of sheep or hog casings. They have a more uniform shape than sheep or hog casings. There is no preparation necessary, just get stuffing! 


LEM Natural Casings: There’s nothing like the distinct “pop” of a natural casing. Natural sheep and hog casings should be rinsed well with warm water and soaked for an hour before use. Make sure they’re soft and pliable before use. If you keep the bag sealed after opening, keep the casings salted, and keep them refrigerated, they should last up to a year. Please note that these are natural casings and each will be a unique size and shape. 


Meat Storage Tools and Accessories 


The LEM Wrapping Kit has everything you need to freeze your home processed meats. It has the following products which can also be purchased separately. 


Included in LEM Wrapping Kit: 


  • LEM Freezer Sheets, 6 x 10.75 inch: These rectangular, plastic sheets will keep patties from sticking together in the freezer. Each box comes with 1,000, 6 x 10.75 inch sheets. 
  • LEM Freezer Paper Roll w/ Cutter, 15" x 450': This roll of poly coated paper is great for wrapping smaller animals like hogs and deer. The cutter is made specifically for this size of freezer paper and can be reloaded with 15” paper which can be purchased separately here. 
  • LEM Freezer Label Set: These neon freezer labels are made with acrylic adhesive that will hang on in the frigid temperatures of the freezer. This pack includes 48 Deer Steak, 48 Deer Burger, 24 Deer Roast and 24 Blank Labels. 
  • LEM Tape Dispenser w/ Freezer Tape: This dispenser can accommodate tape up to 1” wide and with a core of 1” or 3”. The tape has a slip proof rubber bottom. The kit comes with one roll of tape, however you may also purchase a pack of 4 rolls of freezer tape.

Keep your meat preserved in the freezer with LEM Meat Freezer Bags. LEM Meat Freezer Bags come pre-printed with either "Ground Beef," "Pork Sausage," or "Wild Game." These polyethylene bags can hold up to one pound of meat and then be labeled and popped in the freezer. 


Securely close your casings or freezer bags with Hog Rings. We’ve got them in packs of 100 in 1/2” or 3/8” to accommodate different needs. Then, clamp them shut with easy grip Hog Ring Pliers. You may also try the Spring Loading Hog Ring Pliers. These pliers make clamping hog rings similar to using a stapler. The ergonomic design fits nicely in your hand and will remain sturdy for years to come. The magazine on the pliers can hold up to 50 rings. When you purchase the pliers, you also get a 100 rings. We also carry packs of 500 spring loading hog rings


If you prefer a more traditional method of tying casings and bags, try LEM Cotton Butcher's Twine. This twine comes in a 1/2 pound ball (375 ft.) and is perfect for tying sausage casings, corn, roast, and more! 


Jerky 


LEM knows that many people enjoy making their own jerky and snack sticks at home so they also have a complete line of jerky making tools and seasonings. 


First, we have the How to Make Jerky Complete Guidebook. If it walks, flies, or swims, and is legal to hunt, this book will tell you how to turn the meat into jerky. Learn jerky making techniques used in pioneer days all the way up to modern day. This 144-page book has something for every jerky lover. 


Next, you need some seasoning and LEM’s Backwoods Seasonings are the perfect solution. Decide how much meat you want to cure with one packet of seasoning and then choose between Hot, Original, or Pepper Snack Stick Seasoning. The same goes for Jerky Seasoning! Decide which size you want and then choose from Original, BBQ, Hot, Teriyaki, Hickory, Cajun, Mesquite, Jalapeño, and Cracked Pepper. Some flavors are not available in all sizes. Each pack of jerky or snack stick seasoning has a cure packet and a flavor packet. 


Then, you need something to actually form the jerky. The 1.5 pound capacity, manual Jerky Cannon will do just that and so will the 3/4 pound capacity Jerky Gun. Easily load meat and insert the piston into the flared end and get to work! The Jerky Cannon and Jerky Gun both come with 2 stainless steel ends: a 3/16" x1-3/16" flat jerky nozzle and a 1/2" diameter snack stick nozzle. Both come with a packet of Backwoods Seasoning for 5 pounds of jerky. The Jerky Cannon comes with an additional meat stick seasoning packet for 5 pounds of meat sticks.
