Homemade Pasta
Making homemade pasta is a rewarding project to learn about, experiment with and work into your meal plans. Noodles made from scratch have a unique flavor and a satisfying bite not found in store-bought varieties. Without the additives found in packaged pasta, your homemade version is also much healthier. Fresh from Scratch
To make basic fresh or dried pasta, the only necessary ingredients are flour, salt and your choice of eggs or water. Semolina is an excellent flour choice and you can make it yourself by coarsely grinding durum wheat and then sifting the durum flour apart from the semolina; semolina is the coarser part in what you’ll sift and it contains the wheat middlings (middlings consist of wheat bran, germ and endosperm). Durum wheat is the hardest of all wheat varieties, and due to its high protein content it’s very strong. Semolina flour makes better pasta than all-purpose flour, and the fresher the flour the more nutrients it will contain, so we encourage you to grind your own from our GMO-free durum wheat! Semolina creates a strong gluten structure in pasta which makes dough supple and easy to manage. Salt and eggs create depth of flavor, and the eggs (or water) bind the dough together. Olive oil is sometimes added for additional flavor.
After learning the process of making noodles and mastering a basic recipe, it’s time to let your creative juices flow and add your own twist on this traditional food. Fruit juices add sweetness, puréed vegetables may complement the rest of your meal (as well as contribute vitamins) and spices and herbs contribute zest and a pleasant fragrance, so experiment and find what you like best! To make flavored pastas with moist or wet ingredients like tomato paste or spinach, you’ll need to add flour until the dough isn’t too sticky.
