Spiralmac 44kg Spiral Dough Mixer
Spiralmac spiral dough mixers are built in Italy by a family-run company that’s made quality food preparation equipment since 1964. The Spiralmac 44kg mixer is a dough expert, designed expressly to mix and knead doughs, from low to high hydration, quickly yet gently. The key feature that makes this possible is the spiral dough hook, working in combination with the dough breaker bar.
The Spiralmac’s bowl itself rotates, bringing the dough to the spinning spiral dough hook with each revolution. This action is exceptionally thorough and uniform. An integrated offset breaker bar ensures ideal metering of the dough into the spiral hook. This three-way kneading process is exceptionally thorough and fast, yet the low impact and widely distributed dough contact of the spiral hook completely avoids overworking and overheating of the dough. The 60kg mixer is available in a two-speed model and a variable speed model. The wide-range, infinitely variable speed model lets you dial in precisely the action you want. PROFESSIONAL DESIGN & QUALITY
Spiralmac mixers feature heavy duty chain overhead drive for the dough hook. The lower (bowl) drive is driven by a sealed, speed reduction gearbox and heavy duty chain. Sealed industrial ball bearings are used for exceptionally long life. Construction is robust throughout, with a weight of 240 lbs. Epoxy powder coating over a steel cabinet protects the handsome appearance of your Spiralmac mixer.
HIGH HYDRATION OR HEAVY DOUGHS
Thanks to the spiral hook’s action, mixtures that overtax other designs—such as pizza or bagel dough—are handled easily, quickly and efficiently in the Spiralmac 44kg mixer. Doughs of all kinds, from stiff doughs to high-hydration doughs, come out smooth, silky and perfectly developed. With its wide speed range, the Spiralmac handles the full range of dough densities. SUPER CAPACITY RANGE
At 60% hydration, the 44kg mixer kneads up to 97 lbs. (44kg) of dough, but also handles batches as small as 17.6 lbs (8kg). In terms of flour capacity that's 55 lbs (25 kg) down to 11 lbs (5 kg) of flour. Heavier doughs can be mixed when the hydration level is higher than 60%. To mix and knead dough below 60% hydration, like challah or bagel dough, Spiralmac recommends filling the bowl to only half capacity. Capacity of the stainless steel bowl is 56 qt (53L).

SPEED BASED ON HYDRATION
The Spiralmac is a variable speed mixer that has a speed dial marked from 0-10. The table below shows the maximum speed Spiralmac recommends for mixing dough at different hydration levels. These are general guidelines, as dough characteristics vary. If mixing dough that's less than 60% hydration, Spiralmac recommends only filling the bowl to 50% capacity, and mixing for only 10 minutes at a time; judgment must be exercised in any case, to avoid kneading dough so dry it’s outside of normal baking parameters, regardless of the hydration numbers. With dough over 60% hydration, dough can be mixed for up to 20-25 minutes before the mixer should be turned off for about 40 minutes.

Permanently Lubricated Reduction Gearbox
The Spiralmac mixer is equipped with a permanently-lubricated gearbox with tempered steel helical screw. The primary drive unit is the heart of the mixer’s power transmission system, and this sealed, helical gearbox provides the ultimate in strength, efficiency and long life, maintenance-free operation.
Featuring bronze alloy bearings and a case-hardened helical screw constantly bathed in high performance synthetic oil, this speed-reduction gearbox is the gold standard of power transmission for dough mixers.
Caster Wheels
The 44kg Spiralmac mixer comes with two locking caster wheels, and two non-locking caster wheels. The wheels are easy to install upon delivery, or remove in the future, if desired.
ELECTRICAL AND SITING
This size of commercial Spiralmac mixer comes in your choice of two configurations. Both operate on 230 volts. One model operates only on three phase electrical power (also referred to as 3PH, or 3-phase); this 3PH mixer has two operating speeds. The other model operates only on single phase electrical power (also referred to as 1PH or 1-phase); this 1PH model has variable operating speed control. NOTE: 230V, 1-phase power is the kind of power you have in your home, it powers conventional domestic electric ovens and cooktops, and all kitchens (both home and commercial) have 230V, single phase power available. Homes are not supplied with 3-phase power, so if you want to use this size of Spiralmac mixer in your home, you must select the 1-phase model because the 3-phase model would not operate on your home’s power. Some (not all) commercial properties have 3-phase power, which will allow you to use the 3-phase model of mixer if you wish. Whether or not a commercial property has 3-phase power, all commercial properties have 1-phase power, so the 1-phase mixer will work in a commercial setting, just as it will in a home. Also note that 3-phase mixers are shipped with cord-end plugs included, which must be wired to the cord on-site. Wiring the plug on-site is necessary to ensure that the mixer drive rotates in the correct direction on 3-phase power.

I own a small bagel business and with our recent move to a new shared kitchen space we needed to purchase a new mixer. We decided on this Spiralmac SV 44 and it has made all the difference! We doubled the batch amount which saves us time but the best part is how beautifully this machine mixes our bagel dough. Our batch size is roughly 53# in this mixer. This mixer is such great quality! We love it and can’t wait to see how much it will grow our business.
The Spiralmac Mixer 44 is a beast. It works wonders with my dough and it quiet and so easy to use. It is also beautiful to look at as an extra bonus!
