The Brod & Taylor Dough Proofer makes wholesome, made-from-scratch baking easier than ever with an optimum proofing environment plus easy storage. Set it lower for a longer “cool rise” or turn up the heat to give your yeast a boost on a cold winter day. A large window gives you a full view of the spacious interior where your largest bowl or full sized loaves fit easily. There’s no need to cover your dough as the included water tray keeps humidity at an optimum level.

The innovative Brod and Taylor folding bread proofer accurately maintains the temperature you set, in the range of 70–195°F (21–90C), in five degree increments. Its cabinet is built of super tough reinforced polypropylene with a clear viewing window. The stainless steel wire rack, power cord and all other parts fit inside the proofer when folded. Inside dimensions are 14.75” x 12.5” x 8.75” high. Outside dimensions are (open): 18” x 14.5” x 10.5” high and (closed): 18” x 14.5” x 2.75” high, so it stores very easily.

Included with the Brod and Taylor Bread Proofer & Slow Cooker is a 55-page booklet with recipes for yeast breads, sourdough, yogurt, butter, cheese, kefir, kombucha, tempeh, and slow-cooker recipes like chuck roast, pulled pork and caramelized "black" garlic.

Brod & Taylor Slow Cooker Mode 

The Brod and Taylor bread proofer now has a slow cooker mode! In slow cooker mode, temperatures may be set between 85–195°F (29–90C), in five degree increments. For slow cooking recipes that recommend a low setting in traditional slow cookers, set the temperature to the maximum setting of 195°F. Always use a lid on the pot when slow cooking. The rack and water tray are not used when slow cooking. For best results, use a heavy duty Dutch oven or stock pot with a tight fitting lid. Maximum dimensions for a slow cooker pot are 11.5" diameter and 8.75" high, including handles and lid. 

How the Bread Proofer Works 

  • Set Up: Lift the lid then remove the rack, power cord and water tray. Unfold the walls forward along the base into the built-in guides. Place the wire rack on top of the heating plate and over the water tray (if you’re using it). The plug input is on the side. 
  • Temperature & Pre-Heat: Press ON/OFF once for the POWER light to come on. Select the PROOFER mode. Using the TEMP buttons, select your temperature and preheat for 10-15 minutes. The HEATING light will be red until your optimal temperature is reached, at which point it will turn green. Place your mixing bowl, proofing baskets, loaf pans or baking sheet on the rack and close the lid. 
  • Humidity Control: The Brod and Taylor bread proofer may be operated in a dry or humid condition. To create a more humid environment, pour approximately ¼ cup (50ml) of water into the water tray. For best results, use warm or hot tap water. 
  • Fold & Store: Turn your Brod and Taylor bread proofer to OFF and allow to cool. Lift the lid to remove both wire rack and water tray. Fold the expanded box backwards then hinge it forward onto the base. Put the dry water tray in the front area. Invert the wire rack onto its slots. Place the folded power cord on top. Close the lid and press to lock. Scroll to the bottom of the product description to see how easy it is to fold the proofer for compact storage.

Brød & Taylor Folding Rack

The Brød & Taylor folding rack accessory creates a second level in the proofer, ideal for proofing two sheet pans or four loaf pans. While the Brød & Taylor proofer comes with one rack, which sits on the floor of the proofer, this folding rack doubles the usable capacity of your proofer! Sheet pans should be 14¼” x 12” (36.2cm x 30.5cm) or smaller. Loaf pans should be about 3” tall, so that the maximum height of the risen bread is 4” (10cm). Rack measures 14⅜” x 12¼” (31.2cm x 36.5cm). The shelf is 4" above the bottom of the proofer.

Sourdough Home: A Starter Proofer & Cooler

Great bread begins with a great starter and when it comes to sourdough starter, temperature is everything! The complex mix of microbes that cause bread to rise (and give your bread a distinctive flavor and aroma) are extremely sensitive to their environment. The Sourdough Home provides an easy way to precisely control the behavior of your starter. With degree-by-degree control from 41-122°F (5-50°C) you can maintain a consistent temperature or vary it to control the growth rate, aroma, and flavor of your bread. You can switch the temperature display from Fahrenheit to Celsius.

The inside of the proofer measures 5-1/8" x 5.5" x 7.5" which allows a 1 quart jar or two smaller jars to fit inside. Two shelves are included for flexible storage of small items.

KoMo Bread Proofing Baskets

These are the traditional baskets to hold dough during rising cycles (proofing). They're lightweight and easy handling, and their natural construction gives them a warm, attractive look. A removable liner is included with each basket.

The long basket measures 2-3/8" deep x 5-1/4" wide x 14-1/4" long.

Frieling Bread Proofing Baskets

These natural cane proofing baskets (also known as bannetonsand brodforms) hold dough while it's rising, so the dough doesn't lose its shape before baking. The pattern of the rattan construction gives an attractive pattern to bread dough. To use, dust basket with rice flour, and place dough in basket, with seam side up. Let the dough rise, and then gently turn proofed dough onto peel and slide into hot oven. If dough tends to stick to the floured basket, you may want to use a basket liner, available here

Proofing Basket Liner

Paderno proofing basket liners are designed to conveniently line rattan proofing baskets to prevent dough from sticking, eliminating the need to flour the basket, and leaving your dough with a smooth surface. Blades are easy to change and are sharp on all four corners, which allows you to use a single blade in four positions, before you need to replace the blade. My new stress reliever

I lived in western NY for most of my life and had little to no issues with proofing my dough until I moved to central Florida. Air conditioning is normal here almost year round making finding a warmer proofing area essential. Most stoves here are electric as well making it even trickier. I had stopped making breads out of frustration until I found this proofer. I had to talk myself in to buying it seeing it as frivolous, but my family is so happy to have me baking again it was worth the price. My best example of use is that I'm able to make salt-raising again, a bread I had failed at making here for fifteen years. Thank you so much!

Was a teen in the late 60's working in a bakery didn't know the name of a large cabinet with hot plate and water pan was called. Used to raise bread and sweet roll dough before baking. Started to bake bread to have ever steady supply but it wasn't turning out right. Was about to try to build my own small version when I did online search for ways to raise bread dough. Found this proofer and it is great. Nice high fluffy loaves rather than the dense heavy one I was making without this proofer. Easy to set up easy to clean. Variable temperature control.

I haven't had my proofer for too long but the bread I've made raised much better, making a lighter loaf. I've also made yogurt and it turned out wonderful too. Great product!

Great Unit With Consistent Results

I've used this only to proof bread dough so far, but I'm very pleased. It does an excellent job and is quite useful here in New York during the cold months. No more extra proofing times, the timing is the same with consistent results. I haven't experimented with slow cooking or making yogurt yet, but I plan to give it a try soon! All in all, if you're planning on purchasing this unit, don't hesitate, it's worth it!

Great Tempeh incubator

I purchased this product for making tempeh with the added bonus that it can also be used as a slow cooker. So far I have made one batch of Tempeh and it came out excellently. I set the proofed to 88 degrees and when I checked the temp by inserting the probe of a digital thermometer into the Tempeh it read exactly 88 degrees. I was impressed to read that the proofer is calibrated to heat the content of the proofer to the desired temp - not the air inside. I am looking forward to using it as an actual proofer with humidity - I am sure it will be excellent.
