Crusty breads should typically bake at 425-450° F, and pizza dough is best baked at an even higher temperature. One reason for using such high heat is so the bread bakes quickly, resulting in a soft crumb and crusty exterior. Another benefit for using an extremely hot oven is so the initial rise (called “oven spring”) is successful in developing a beautiful, full shape from your dough. The 1-3/8” thick stone shelves in the Rofco ovens can hold extremely high heat and then quickly transfer that heat into your baked goods.

Rofco B5 Brick Oven: The most compact Rofco brick oven, the B5 has one brick shelf. It has a 4.4 pound dough capacity, 6.3’’ tall baking space, and weighs 49 pounds. The B5 Oven includes one baking tray, one baking sheet, and a manual.
Rofco B10 Brick Oven: Weighing 77 pounds, the B10 has two brick shelves, which offer baking space for 8.8 pounds of dough. Each baking space in the B10 is 6.3” tall. This model comes with two baking trays, two baking sheets, and a manual.
Rofco B20 Brick Oven: The B20 has three brick shelves. It has a 13.2 pound dough capacity, and weighs 123 pounds. Each baking space in this model is 6.3” tall, and it includes three baking trays, three baking sheets, and a manual.
Rofco B40 Brick Oven: Rofco’s largest oven weighs 187 pounds, has three brick shelves, and has a 26.4 pound dough capacity. The B40 oven baking spaces are taller at 8.6” and it includes three baking trays, three baking sheets, and a manual.
Rofco Oven Steam Trays allow you to use steam in your baking process for crispy crusts and a beautiful shine. Simply pour water into the steam tray and place it in the oven. Within 30 seconds, copious amounts of steam are generated.
If you're cooking something oily, sugary, or just messy in general, the Rofco Oven Tray is perfect for you. These trays protect the brick shelves of the oven without affecting the benefits of brick baking.
The Rofco Baking Sheet has the same effect as baking paper, but with a more rigid design. You can prepare food on the baking sheet and then slide it directly into the oven.
