Last year I needed to replace a dying KitchenAid Artisan and chose the Ankarsrum over the Bosch Universal because it seemed like the Bosch needed too many add-ons. I'm totally satisfied with the Ankarsrum. I've made lots of different kinds of bread, cookies and cakes, and whipped egg whites with no issues. There is a learning curve. After some trial and error, I almost always use the dough hook for bread, the roller and scraper for almost everything else, and ALWAYS use softened if not actually melted butter. Cold butter gets stuck in the roller and even though the mixer comes with a hand scraper/spatula that perfectly fits the roller grooves I'd rather not have to stop and scrape. The cake whips are not really sturdy enough for soft cookie dough or batter bread but for regular cake batter or mixes they work fine. The machine is built to last and the parts are easy to clean by hand (I don't have a dishwasher so can't speak to that). This mixer is expensive but is worth saving for and should last a long time. I have only had my mixer a week but have done three very different doughs and bakes so I have some appreciation of the Ankarsrum mixer. Since attending bread classes at the San Francisco Baking Institute I have wanted a spiral mixer both for capacity and bread characteristics. When the gears on our Kitchen Aid started groaning on my bread dough I decided it was time. (Note: I have a wood fired oven and need about 12 to 15 pounds of dough as a minimal batch so big batches are helpful. )
First impressions of the Ankarsrum mixer are quite positive. While the instructions are a bit vague online videos are helpful. While I am still tuning my process it is clear the dough mixes well and is kneaded more gently and with less aeration than a conventional mixer. To date my doughs have generally been underdeveloped but that is just fine tuning. Experience so far suggests the results with this mixer will be quite predictable and that is s blessing.
I love that it doesn't walk like conventional mixers. And I like the range of speed control and the timer which give more freedom to your baking process.
Two cautions. Heavy bread doughs like to grab scrapers And utensils so TURN IT OFF when you put any object inside the bowl. Also, treat the scraper with care to protect the scraping edge of the blade. It can be nicked somewhat easily which I did. On the plus side a little rubbing on a fingernail smoothed it back up and it is working perfectly.

I love my new mixer. I can mix enough dough in the large stainless bowl to make several loaves of bread; with my Kitchen Aid it was impossible. I especially like the scraper feature and the lid. I can proof my bread in the same bowl as mixed in. I recently recommended this mixer to a friend who also owns a Kitchen Aid and she was as impressed with the features as I was. This is a very heavy duty mixer that excels at large batches of bread dough. The whisk assembly is not as good as a Kitchen Aid because the gears are plastic and the teeth can break. I wish the gears were more sturdy. If you whisk butter it needs to be very, very soft. What I really like about it is that it's easier to add ingredients. With a Kitchen Aid the mixer head is in way on top and you have to stop and raise it out of the way to add ingredients. With the Ankarsrum that isn't necessary. I think the quality is better than a Kitchen Aid as well. With my Kitchen Aid the bowl kept disconnecting. Be prepared for a learning curve because it's substantially different than a Kitchen Aid and the instructions it comes with are not very good. Especially great for bread dough (I've had more success with the roller attachment than the dough hook). Open top makes adding ingredients a snap. After breaking the gears in my Pro Kitchen Aid so many times, I decided to try this unusual mixer. Solid construction, and beautiful too. I like the whisk attachments for light mixing. I took a long time to finally decide to buy this mixer. The design was different from any I'd used, and the price was higher. But I'd been through KitchenAid, Cuisinart and Breville and was still unhappy. This is the absolute best I've ever used. The design is brilliant, it takes on small jobs and big, and there is hardly any mess to clean up due to the brilliant design! I love this mixer, and recommend it highly. I'm looking forward to years with it. I just received my Ankarsrum mixer and as promised to my husband, my first recipe was cinnamon rolls. I LOVE this mixer!!! I so pined over bypassing Kitchen Aid but I know I made the right decision. This weekend coconut cake. I can't wait to add attachments. Also so glad I bought from Pleasant Hill. I received it so quickly! Love this tool!

This is my first "stand" mixer. After careful consideration and many hours of research, I finally decided on the Ankarsrum. My primary reason for selecting this machine is for bread doughs. My first bread dough had a hydration of 68%. The mixer handled it effortlessly. But the real test came when I made bagels. The recipe said to take it out of the mixer when the mixer got hot (presumably with a KitchenAid) and knead 10 more minutes by hand. I was able to finish the dough in the Ankarsrum without any intervention other than removing the bowl scraper because it started to interfere with the kneading action of the roller. I have yet to use the other attachments other than for testing, but I will update my review when I do. Over all, I'm am pleased with the choice I have made and think it's worth the price tag of a machine that will probably give me years of service.6 out of 6 people found this review helpful. Did you?

My husband and I have owned our Ankarsrum Original mixer for six months and this is one of the best investments we've made in our home! It's truly exquisite and works like a dream for my artisan bread making endeavors. We are a young couple and expect this beautiful mixer to last recipe after recipe, hopefully for generations to come. I am the cook and baker in our home and enjoy every minute of it. I've been learning so much as the time goes by and it's wonderful when you can have the proper equipment and tools to get the job done right, though in reality we never stop learning new things!
The "light créme" color of this mixer is absolutely lovely and was the first color that struck my eye—I knew it was the one! However, the PHG employee we spoke with went above and beyond to compare three requested colors for us and gave her opinion to help us. That was a nice aid considering we couldn't see the mixers in person. I decided to wait six months to post a review, in order to take time to learn how to use everything and experience the results of different recipes. This machine is worthy of a wonderful-good review! It is beautiful (a different and unique style compared to American mixers), impressively well-made and labors like a workhorse. It takes time to learn how to operate the mixer properly, much like learning a new language yet it becomes second nature with more input and practice. I highly recommend reading your manual and watching videos online from reputable sources and looking for blogs of people who own or operate this mixer; however, we think "hands-on experience" is the best teacher! : ) My husband (who is new to cooking and baking) thinks it's an extremely well made mixer and he has fun seeing how it works when making something. We once owned a KA Artisan mixer but it could not hold up to a batch of soft "Russian Tea Cake" cookie dough and especially bread. Aesthetically, it was very pretty and pleasing to the eye (I had the Pistachio color) and mixed delicate things like cream and cake batters nicely but it made me nervous with certain tasks like cookie dough and breads.
Making bread was the main reason for desiring a stand mixer and the KA didn't give me the results or confidence that it could handle everything down the road. I used to make bread by hand but we both didn't want to risk overworking or potentially damaging my wrists over time for health concerns. I liked practicality of the KA for small mixing jobs, both sweet and savory. The KA may be perfect for other home cooks' needs but it didn't suit ours. We very rarely make desserts and sweet goodies, though we certainly enjoy those for a special occasion. Due to financial hardship during that time, we returned the KA Artisan and made the decision to wait until we could save up for a new one. In a course of three years, I scoured online websites for used or discounted KA mixers, and then bumped into a unique looking, European mixer called the "Ankarsrum Assistent/DLX. " I've heard it has had several names over the years. Researching on and off, I found that it was tailored for home cooks and bakers who were serious about bread making—that was me! : ) Reading how it was ethically and entirely made in Sweden from Swedish-sourced materials, I was intrigued but kept debating. When we were finally able to purchase a nice mixer, we knew it had to be a "buy it for life" item. No more gambling or throwing away our money on potential costly repairs, expensive warranties or big regrets down the road. Before we bought the Ankarsrum, we ordered a KA Professional 600 (in white) from a fancy and well known retailer. I was grieved when it arrived, considering how much we paid and the quality we expected. The KA Professional had tons of defects and it sounded awful, like something was wrong. It made us feel nervous. Everything felt and appeared to be made of a poorer quality, even my husband was disappointed. The top of the line KA Pro line looked cheap to both of us in a store. There were concerning reviews about that company. We had high hopes and wish they would make things right. We try our best not to support companies that we speculate have gone down a bad path, although that doesn't mean KA mixers are a bad choice.
We chose the Ankarsrum Original Assistent after watching lots of videos and reading many reviews online. I wanted a stand mixer that could properly develop the "gluten" in the dough. There is so much science involved in cooking and baking and I did not know about this detail until hearing about Ankarsrum. The design of the roller attachment mimics the human hand while the scraper mimics the palm of the hand in the bread making process, isn't that neat? Having made large batches of sweet Challah to a single batch of soft sourdough and even a dense rye pumpernickel, I can't say more good things! I've whipped up all kinds of muffins, dinner rolls, buttery crescent rolls, focaccia, garlic knots, pizza dough, etc. I'm looking forward to making bagel dough and brioche in the near future. Pleasant Hill Grain is a truly wonderful company, we were drawn to their friendliness and willingness to help answer any questions we had and to accommodate us. We really wish we knew about them a long time ago! They make us feel like family or friends, not a number. We cherish supporting family businesses who enjoy what they do and strive to do what is right. Yes, it was difficult at first to digest how much we were paying for just a stand mixer; however, knowing how much it helps me in the kitchen reminds us exactly why we made this investment. We have the citrus juicer attachment and enjoyed making fresh juice with locally grown oranges for the first time. Be sure not let the stainless bowl sit overnight with food or soaking with soapy water, it may potentially discolor the bowl. It might be common sense but there are days where I can feel tired, burnt out or just plain forgetful. This machine is of the highest quality we've seen, it could be passed down in the family as an heirloom for the next generation. Building our kitchen with quality tools helps us feel like we are moving in the direction of self-sufficiency while saving money on food in the long run. Someday, it will pay for itself although that's not the main reason we went down this road. I look forward to all the goodies and all the memories to be made with the assistance of this machine. It is so nice to know and to be able to be in charge of what you're eating, especially when it comes to bread. For health and nutritional reasons, we plan to invest a beautiful KoMo Classic grain mill very soon to grind our own grains as well as the KoMo rattan proofing baskets! Mastering and having fun experimenting with wholesome, homemade whole grain artisan bread is my goal.
