Manage from Anywhere

The Proofer Pro connects to the free Smart Life app on iOS and Android allowing you to track your dough environment from your phone. Easily monitor and adjust your settings remotely, giving you flexibility without sacrificing control. With the app you can turn the Proofer Pro on and off, adjust the temperature, set and monitor timers, and switch between °F and °C. The Proofer Pro has been tested and approved for unattended operation and may run continuously. 

Humidity Control & Fully Programmable

Eliminate guesswork by using the integrated humidity management feature. The included water tray maintains optimal moisture levels, protecting your dough’s surface and ensuring proper development throughout the process. Fully programmable time and temperature controls allow you to dial in the exact environment your dough needs. Once set, the system maintains precise conditions, delivering consistent, repeatable results every time. While there's no humidity dial, you have full control by simply adjusting how much water you add to the tray. Add more water for a more humid environment, or leave the tray empty for a drier environment. The typical humidity when the water tray is in use is around 80%.

Room for Everything You Want to Make

Designed with capacity in mind, the spacious interior measures 18.25" wide by 13.5" deep by 10" high and accommodates up to four 13" x 18" half sheet pans or six batard bannetons. Capacity will vary with different banneton sizes and shapes. It also fits large proofing bins and multiple bread pans. Two oven-safe half sheet pans are included so you’re ready to start baking right away. Additional solid and perforated half sheet pans are available separately, below.

Two Brod & Taylor 6L proofing boxes fit perfectly in the proofer, making it ideal for bulk fermentation. The proofing boxes measure 12.8" long x 10.5" wide x 4" deep, and have a capacity of 6 liters, making them ideal for up to 3kg of dough each.

The Brod & Taylor dough proofing box is the perfect container for mixing, proofing, and folding any type of bread or pizza dough. The box is made of food-safe, BPA-free polypropylene for durability. Its naturally nonstick property prevents dough from sticking and makes cleanup easy. Ensure a perfect rise by using the tight-fitting lid which helps maintain consistent humidity and temperature. Volume markings on the side make it easy to track dough height.

The support of the basket encourages better height, shape, texture and results in a stronger rise and crisper crust. When maintained well, these baskets can be used for years. 

Brod & Taylor's proofing baskets are affordable without sacrificing quality or safety. The upcycled sugarcane pulp and renewable bamboo material results in a basket with shallow grooves, making it especially easy to clean out any leftover flour. Pulp material also absorbs moisture more evenly across the surface; this can help prevent sticking, encourage a slightly drier exterior, and promote better crust development in hearth-style loaves. Some bakers find that pulp creates a more consistent skin on high-hydration doughs. 

While rattan baskets are often used with cloth liners (especially for higher-hydration doughs), pulp baskets are typically designed to be used without one. This simplifies the process and gives a more natural flour-dusted finish.

Sourdough Home: A Starter Proofer & Cooler

Great bread begins with a great starter and when it comes to sourdough starter, temperature is everything! The complex mix of microbes that cause bread to rise (and give your bread a distinctive flavor and aroma) are extremely sensitive to their environment. The Sourdough Home provides an easy way to precisely control the behavior of your starter. With degree-by-degree control from 41-122°F (5-50°C) you can maintain a consistent temperature or vary it to control the growth rate, aroma, and flavor of your bread. You can switch the temperature display from Fahrenheit to Celsius.

The inside of the proofer measures 5-1/8" x 5.5" x 7.5" which allows a 1 quart jar or two smaller jars to fit inside. Two shelves are included for flexible storage of small items.

Sourdough starter is a living colony of yeast and good bacteria. Like any living thing it needs to eat—just flour and water. Feeding your starter the proper ingredients at the right time is the first step in creating great sourdough bread. As starter ferments and grows, it creates CO2 bubbles that cause the mixture to rise in its container.
