During the final proof, a banneton (proofing basket) gives structure to your dough that helps it rise upward instead of outward. The support of the basket encourages better height, shape, texture and results in a stronger rise and crisper crust. When maintained well, these baskets can be used for years.
Brod & Taylor's proofing baskets are affordable without sacrificing quality or safety. The upcycled sugarcane pulp and renewable bamboo material results in a basket with shallow grooves, making it especially easy to clean out any leftover flour. Pulp material also absorbs moisture more evenly across the surface. This can help prevent sticking, encourage a slightly drier exterior, and promote better crust development in hearth-style loaves. Some bakers find that pulp creates a more consistent skin on high-hydration doughs.
While rattan baskets are often used with cloth liners (especially for higher-hydration doughs), pulp baskets are typically designed to be used without one. This simplifies the process and gives a more natural flour-dusted finish.
Pulp baskets are commonly used in professional bakeries for efficiency and uniformity.
