The Wonder Junior Deluxe+ grain mill comes with interchangeable milling heads that lock onto the body of the mill: One pair is stone and the other pair is steel. Grinding speed & quality

The Wonder Junior is among the easiest-operating hand crank grain grinders on the market. With the quick change head system you can switch from grinding dry grains, beans and legumes to oily or wet grains, nuts, seeds or coffee, in just minutes. The Wonder Junior is a fast hand mill, producing 1-1/4 cups of fine wheat flour in 1 minute with very reasonable turning effort. It has a generous hopper capacity of over 1 quart.

Stone Burrs 

The thick, 4" diameter corundum stone burrs of the Wonder Junior mill combine aggressive precision grinding with long burr life. Using the stone burrs, your Wonder Junior can grind wheat (both hard and soft), oat groats (dehulled oats), rice, triticale, kamut, spelt, dry beans, lentils, dent (field) corn, popcorn, dried sweet corn, split peas, buckwheat, barley, rye, millet, teff, quinoa, amaranth, sorghum, dried mung beans, garbanzos, and more (all dry grains and beans). The Wonder Junior can easily be adjusted to grind coarse, fine, or anywhere in between—so you're ready to make flour, grain meal, cereal grinds, cracked grain... you name it. Switching between stone and steel burrs takes less than two minutes.

Stainless Steel Burrs 

The 4" diameter stainless steel burrs of the Wonder Junior mill can be used with any of the dry grains and beans that the stone burrs can be used with. In addition, the steel burrs can be used for oily or wet materials that would gum up and/or clog grinders that use only stone burrs or impact-style milling heads. In conjunction with its newly redesigned, highly aggressive feed auger, when using the steel burrs the Wonder Junior mill can grind nuts, coffee beans, herbs, spices, oilseeds like flax, fibrous materials or sprouted seeds or grains, cacao nibs, dried bone, alum and more. Rugged construction 

The robust construction of the Wonder Junior grain mill is seen in its solid metal unibody design, heavy duty replaceable bronze bearings, large diameter (5/8") steel drive shaft and a heavy duty crank arm with handle that's sized to be comfortable for every hand. Each component of the Wonder Junior is more than strong enough for decades of daily use. The construction of the milling body extends to the milling heads as well. The steel and the corundum stone burrs alike are engineered for both excellent grinding performance and long life. Dual Grip Clamp 

The Wonder Junior's table clamp wasn't an after-thought, as is the case with many mills. It attaches easily, and with its large dual clamp screws it won't slip during grinding. The large swivel pads on each screw mean it won't chew up your table, and it accommodates surfaces up to 2-1/8" thick and a counter overhang from 2-1/2" to 2-3/4" deep. 

Quick Cleanup 

It takes just one to two minutes to clean the mill out after grinding a material like dry grain, and a handy brush is included that makes it easy. Because the Wonder Junior Deluxe+ includes the Flour Guide as standard equipment, you won't have flour scattered around on your counter. Cleanup takes a little longer after grinding wet or oily products (like when making nut butter), but the mill's quick, tool-free takedown makes any cleanup simple and hassle-free.

WHOLE GRAIN NUTRITION: HARVEST THE BENEFITS! 

Imagine that for years, your children ate mainly candy. Imagine that you did, too. Imagine an entire nation on a candy diet. Imagine the health consequences.

Whole grain pancakes Natural whole grains contain a myriad of health-essential nutrients, from proteins to vitamins, essential amino acids, and crucial fiber. But "white flour" consists only of the starchy endosperm of the wheat kernel. In its natural form the endosperm provides wholesome energy, but it's the least nutrient-rich part of the grain. Removed are the nutrient-packed bran, wheat germ, and wheat germ oil. Then to make it extra white, industrial processors go further, chemically bleaching it, and returning just enough of a few vitamins to stave off beriberi and rickets. They're allowed to call the end product "Enriched Flour" but a truthful label would read "Impoverished Flour." This snow white, denutritionalized substance is a commodity worth billions of dollars annually to its merchandisers because of a commercially useful trait: Unlimited shelf life. No matter how long it sits in the mass distribution channel, it can't go bad precisely because there's actually nothing left in it that can go bad. Nutritionally, it's bad when bagged. A few companies have grown enormously rich marketing this pseudo-food on the basis of convenience, ease, and its dazzling white appearance. And to make matters worse, artificial sweeteners, flavors and colors, appetite stimulants and preservatives are added to many of our foods, including numerous substances banned by other countries for their unhealthfulness. "Artificial" tells you those things aren't naturally food. But have you ever wondered what they actually are, then? Did you know some of them are actually petroleum derivatives? And what harmful effects might these complex counterfeit compounds be having on us?

The human body is an absolute marvel; scientists have a long way to go to understand more than a small fraction of how we work. But as capable and as resilient as our bodies are, common sense and history teach that we need wholesome, nutritious food to remain healthy and strong. The denatured byproducts being mass marketed today don't provide what we need, because they've been profoundly altered by processes in which real nutrition is considered last, or not at all. 

Homemade artisan whole grain breads There's a great solution to this problem. By making flour in your kitchen and using the whole grain flour while it's fresh, you get the nutrition needed for strength and health. You also get far tastier food, with genuine character—incomparably more satisfying than today's mass marketed pretenders. After transitioning to whole grains, putting out a plate of white styro-bread will elicit comments like "Why are you giving us this ... and where's the good stuff ?". Even flour labeled as "whole grain" in stores falls far short of what you can easily grind yourself, because unless it's ground while you wait, the essential Vitamin E in true whole grain flour would go rancid in days (meaning that it's probably been removed), and all nutrients begin steadily oxidizing-away from exposure to oxygen as soon as grain is milled. What's in those bags is not whole grain flour if it's been sitting on a shelf for even a few days; that's literally impossible.

Motorizing Kit for Wonder Junior Deluxe

A motor drive is now available for the Wonder Junior Deluxe Mill. It uses a 1/2 HP Marathon motor for fast, effortless milling, and includes a cover to keep fingers out of the gears. The motor drives the mill shaft at about 200 RPM. Save $35 by purchasing the motorizing kit on this page over purchasing all the parts separately. This Wonder Junior Deluxe Motorizing Kit includes:

The motor drive is packaged and shipped separately from the mill, but assembly is simple and easy. Watch the video above for full instrucitons.It's important to keep the gears well lubricated with grease. This is a very high quality setup that runs smoothly and quietly and will do so for many years.

The Wonder Junior Deluxe Mill is sold separately. A power cord is not included, and neither are screws/bolts to attach the safety cover to the board. Screws/bolts for the safety cover can be picked up at a local hardware store.

The pulley set is compatible with either a 1/2" or 5/8" shaft. The video above incorrectly states that it's compatible with a 3/8" shaft.

Drill Adapter for Wonder Junior Mill

This adapter lets you power your Wonder Junior grain mill with an electric drill. The mill should not be turned at more than 300 RPM (revolutions per minute), which is about twice the typical speed of hand cranking. With many drills it's difficult to maintain a particular speed. The DeWalt DW130V is one drill that users have found it pretty easy to control the speed with. Powering the Wonder Junior mill using this adapter and a drill does not void the manufacturer's warranty. The Power Drill Adapter includes a special tool that makes handle removal easy.

Bicycle Sprocket Drive for Wonder Junior Mill

Chain Sprocket fits on the shaft of your Wonder Junior Hand Grain Mill so you can hook it up to a bike. The chains of most modern bicycles will fit the sprocket, and mill speed must be no more than 300 RPM. Pulley for Wonder Junior Deluxe Mill

This large heavy duty pulley wheel accepts standard V-belts and can be used to provide power to the Wonder Junior Deluxe mill from a variety of power sources. Whatever power source you may use, the Wonder Junior needs to be turned no faster than 300 RPM (revolutions per minute), which is about twice the typical speed of hand cranking. Power sources are limited only by your imagination. One popular approach is adapting a standard or exercise bike so you can use leg power rather than arm power. An electric motor can be used, but note that motorizing the mill voids the manufacturer's warranty. (Use of the manufacturer's separate Power Drill Adapter accessory does not void the warranty.) The Pulley Wheel includes a special tool that makes handle removal easy. If you motorize your mill, a full belt guard is essential to prevent injury.

Hard White Wheat, SuperPail

This conventional/non-organic hard white winter wheat is ideal for bread making. Breads made with hard red and hard white wheats will be very similar; the main difference is that red wheat produces a fuller, heartier flavor, and the bread will have a slightly darker color. If you're just starting out with whole grain baking and don't know how to pick, we suggest starting with hard white wheat. Note: Don't confuse "whole grain white wheat" with store-bought "white flour"! White wheat kernels are actually light brown in color. Store-bought white flour, on the other hand, is essentially nothing more than the endosperm (energy-producing carbohydrate) part of the kernel, with nearly everything nutritious removed in the interest of indefinite after-milling shelf life... which benefits huge commercial millers, at the expense of your health and the character of your food.

Our grain is triple-cleaned. It's also been tested, in the most meaningful way possible: By baking bread with it. You can depend on wheat from Pleasant Hill Grain to make bread and other baked goods that rise well, taste wonderful, and are packed with wholesome, natural nutrition! For those who may want to sprout some, our wheat is sproutable. Sprouting results may vary.

In whole-grain foods, the plant's cellular walls protect nutrients from oxidation. The process of oxidation begins to occur as soon as grain is ground, exposing the cell's contents to oxygen in the air. Flour that is several days (or more) old, has been exposed to oxygen that inevitably diminishes its nutritional value. The way to get full nutrition from whole grain foods is to mill them when you need them, right in your kitchen. Modern high-speed grain mills make it fast and easy to enjoy the freshest, best tasting and most nutritious food imaginable!

Our wheat comes in five-gallon buckets (or pails... another name for the same container.) The net (contents) weight of the grain is 36 lbs. When you store grain at home, it needs to be protected in a couple of ways. First, it needs to be protected from a variety of little critters who'd like to get to it before you do. Weevils, for example. And isn't this interesting: Chances are you've never seen weevils in the white bread or crackers you bought from the store. That's because weevils put no stock in media campaigns from white-flour milling conglomerates; rather, they know what's good for them, and they'd come after your grain from miles around if you let them. And mice have good nutritional judgment, too. Not that there's ever been a mouse in your house, but if there was... you wouldn't want it having access to your grain. Secondly, grain needs to be kept dry. The grain we sell is all dried to a very low moisture level that's optimal for storage and baking and guarantees that you get the most grain for your money. You need to protect your grain from picking up excessive additional moisture, which can be drawn from the atmosphere. The buckets our grain comes in provide full protection against storage risks. They have airtight gasket-sealed lids, Mylar liners, and oxygen absorber packets that remove the oxygen from the air in the bucket after we put the lid on. The O2 absorbers leave an atmosphere of nitrogen in the bucket, because air consists almost entirely of oxygen and nitrogen. (The oxygen absorber packets themselves are completely food-safe, being made of powdered iron and salt, which are kept separate from the product itself.) Our buckets safely lock out pests, and biological processes are put "on hold" in the Mylar protected, oxygen-free nitrogen atmosphere, so your grain enjoys complete peace and quiet until you want to use it. Note: If you don't already have a bucket lid removal tool, they make lid removal easy (see lower section of this Web page). Super Pail packaging is the "gold standard," the ultimate protection for your grain!

All of our grain is triple-cleaned (also called "triple washed") to ensure purity and protect your grain mill from any foreign objects. (Grain that isn't sufficiently cleaned may contain small stones that will damage or destroy a grain mill... not to mention that you don't want such things in your food!)

Our hard white wheat has a shelf life of 10+ years when unopened and stored in a cool, dark, dry environment.

All of Pleasant Hill Grain's whole grain products are natural (non-GMO). This applies equally to both the Organic and the Conventional (Non-Organic) grain. Also, PHG does not sell any grains, beans, lentils, pulses or seeds sourced from China.

White wheat (triticum aestivum) is a gluten-containing grain that’s very similar to red wheat, but has a sweeter, milder flavor and lighter color. There are two kinds of white wheat: hard white winter wheat, and soft white spring wheat. The wheat for sale on this page is hard white winter wheat.

White wheat is a hybrid grain, which means that older varieties of wheat with qualities such as disease resistance, weather tolerance, and high protein content, were crossed to produce a crop that has all the best qualities for bread baking and high yields.

Hard wheat has a higher protein content than soft wheat, and more protein translates to stronger gluten development in baked goods. This means that hard wheat is the best variety of wheat for making bread, pasta and pizza dough with. Soft wheat is ideal for cookies and pastries.

Hard winter wheat’s protein content typically ranges between 10-12%. Hard winter wheat grows predominately in the southwestern and mid-western prairie states whereas hard spring wheat will grow best in the Dakotas, Minnesota, and Montana.

Hard white wheat can be ground into flour, flaked (rolled), or cooked and eaten as a side dish similar to rice. White wheat is high in iron, protein, and fiber. It’s a versatile, delicious, and nutritious choice for everyday baking!

To cook hard white wheat, it’s best to soak the grain overnight. Soaking the grain will ease digestion, make the grain’s nutrients easier to absorb, and shorten the cooking time. To cook, add the whole or cracked, pre-soaked white wheat berries to boiling water (2.5 parts water to 1 part grain) for 45 minutes to an hour. The cooked wheat can be used to make grain salads, or to put into casseroles or soups.

If you’re transitioning from white bread to whole wheat bread, using white wheat is an ideal wheat to start with because of its mild flavor, and white color. We recommend you begin baking with half white flour and half whole wheat flour, and increasing the percentage of whole wheat flour over time. This should make the adjustment easier, especially for children. If you’re unsure whether red or white wheat would be better, we suggest getting a sample of each to find out which you enjoy the flavor of better. Grain samples can be purchased here.

Our hard red wheat has a shelf life of 10+ years when unopened and stored in a cool, dark, dry environment.

All of Pleasant Hill Grain's whole grain products are natural (non-GMO). This applies equally to both the Organic and the Conventional (Non-Organic) grain. Also, PHG does not sell any grains, beans, lentils, pulses or seeds sourced from China.

Red wheat (triticum aestivum) is a gluten-containing grain that’s very similar to white wheat, but has a more robust, nutty flavor. To sweeten the slightly bitter taste of red wheat, honey may be used in a bread recipe. There are three different kinds of red wheat: hard red winter wheat, hard red spring wheat, and soft red winter wheat. The wheat for sale on this page is hard red winter wheat. Red wheat is so named because of the color of its bran, which has a reddish hue.

Red wheat is a hybrid grain, which means that older varieties of wheat with qualities such as disease resistance, weather tolerance, and high protein content, were crossed to produce a crop that has all the best qualities for bread baking and high yields. Red wheat was originally introduced to the Great Plains in the 1870s by immigrants from Russia. Today, the majority of wheat grown worldwide is hard red wheat.

Hard wheat has a higher protein content than soft wheat, and more protein translates to stronger gluten development in baked goods. This means that hard wheat is the best variety of wheat for making bread, pasta and pizza dough with. Soft wheat is ideal for cookies and pastries.

Hard winter wheat’s protein content typically ranges between 10-12%. Hard winter wheat grows predominately in the southwestern and mid-western prairie states whereas hard spring wheat will grow best in the Dakotas, Minnesota, and Montana.

Hard red wheat can be ground into flour, flaked (rolled), or cooked and eaten as a side dish similar to rice. Red wheat is high in iron, protein, and fiber. It’s a versatile, delicious, and nutritious choice for everyday baking!

To cook hard red wheat, it’s best to soak the grain overnight. Soaking the grain will ease digestion, make the grain’s nutrients easier to absorb, and shorten the cooking time. To cook, add the whole or cracked, pre-soaked red wheat berries to boiling water (2.5 parts water to 1 part grain) for 45 minutes to an hour. The cooked wheat can be used to make grain salads, or to put into casseroles or soups.

If you’re transitioning from white bread to whole wheat bread, we recommend you begin baking with half white flour and half whole wheat flour, and increasing the percentage of whole wheat flour over time. This should make the adjustment easier, especially for children. If you’re unsure whether red or white wheat would be better, we suggest getting a sample of each to find out which you enjoy the flavor of better. Grain samples can be purchased here.

Whole Grain Baking Cookbook by Sue Gregg

This cookbook from Sue Gregg teaches you the basics of whole grain baking by two methods: Both with the conventional approach, and with the "Two-Step Process" that utilizes the techniques of soaking, sprouting and fermenting to unlock grain's nutritional potential. After trying several cheaper grinders that didn't do a good job I decided to go with the wonder junior deluxe. The quality was as good as mills that were MUCH more expensive. It was one of the few mills in this price range that would also handle wet grinding like nuts etc. I feel confident that this grinder will meet my needs for years to come.

I just recently purchased the Wonder Mill Jr. because I wanted a reasonably priced, hand operated grain mill, rather than an electric mill (if the power goes out it wouldn't do much good). I got a cheaper mill and destroyed it in ten minutes (broke the gear off) The Wonder Junior. has worked really well so far. I'm still learning how to adjust the stone grinding heads for the type of flour I need. The bread that I have made has been fabulous! The only problem I had was there wasn't a lock washer on the back of the handle, so it kept spinning itself off, but I put one on myself and remedied that little inconvenience. Even with that said, I'd actually give the Wonder Junior 4-1/2 stars. Nice, sturdy, reasonably priced, versatile, wonderfully made mill. Thanks.

Works very well

I bought this because I wanted coarse ground cracked/broken grain at times, and my Kitchenetics Mill (electric micronizer mill, aka the baby jet plane) only does superfine grind. This does exactly what I want, and I can make crackers with very little fat or sugar by rolling them out as thinly as permitted by the size of the cracked wheat or oat or rye or barley--the coarse grains help to keep them snappy but not tooth-shatteringly hard.

It is a bit heavy to handle, but that's to be expected for what it is--a simple and solidly built machine. I rate it below 5 stars only because some grain gets left at the augur no matter how long I keep turning the handle at the end of the session, and that is irritating to have spill out in to the bowl of finished flour or cracked grain, or on the the floor or cabinet shelf if I don't shake it out quite enough at the end.

Quality Hand Mill

I am a 70-year-old female. I purchased this mill because my husband and I live alone and I won't be baking large quantities, but I did want to begin using freshly milled grain. I was unsure about how hard it would be to hand crank a mill and whether I would be happy with my purchase. If you want a test of what the hardest item will be to grind, try popcorn. That was by far the most unpleasant grinding experience. Everything after that seems quite easy! I have since learned that regular corn can be purchased dried, so there should be no need to grind popcorn to obtain corn meal.
Another thing I took into consideration is the need for older people to keep moving/exercising. I felt that if I need to work out anyway, why not do it by grinding grain?
I have tried oat groats, rye, brown rice, and white Spring wheat. I think I threw some amaranth in with something else at one point. The wheat is what I have used most often, usually 2 cups at a time.
I do not have a good area to set up the mill. The only option is our raised countertop that is waist high for me (higher than the recommended height), and I have to set up and take down the mill each time that I wan't to use it. Fortunately, it's an easy process to screw the mill onto the countertop and to unscrew and remove it when finished. I have found that two thin catalogs on top of the counter, and one thin one underneath, "cushions" the area so that the mill attachment doesn't dig into the countertop, and the mill remains solidly steady as I am cranking.
It takes several minutes and a few breaks in between (because hand cranking is physically demanding, and I am not young and strong) to grind my flour, but I use that time to get out other things I need for the recipe I will be using, so my time is not wasted.
The stone burr does a superb job of grinding the grains. I can set it to whatever degree of fineness that I desire, and it remains at that setting during the grinding process (and beyond unless I change it). I have typically been using a fine setting, and the flour has a very nice, soft feel. The baked goods also have a fabulous texture. I didn't know that whole grain flour could produce baked goods that have the same texture as from store-bought white flour.
Another reason I chose the Wonder Junior Deluxe+ is the stainless steel burr and masa/nut butter auger that comes with it. That makes it capable of doing what would otherwise require the purchase of two appliances. I have not yet used these, but do plan to as time goes on. Screwing/unscrewing the burrs to change from stone to stainless steel is easy once you feel familiar with the mill. At first, everything looks extremely intimidating!
Bottom line - This is a high quality mill that does an excellent job, at a very reasonable price compared to other mills, and I see nothing that would potentially break. I anticipate that this mill will last as long as I am on earth. A big HOWEVER to consider is the hand cranking. Most of us want to get something done quickly and move on with our day. Unless physically strong and not minding the time it takes, many people will prefer an electric mill that will produce flour very quickly

I'm amazed at how high the quality of this mill is. This is as heavy duty as you can get, but still be easy to use. It's straightforward and grinds so many more grains, nuts and seeds/legumes than any other mill I found while I was searching. I'm a senior citizen trying to eliminate chemicals and additives from my diet and this is already helping me do that. I want my grandchildren to benefit from it too. It takes no electricity and it's a great workout for my arms too!
