The IM-5 mixer is available in two dough hook RPM ranges: 80-240 or 80-300 RPM. Read about the difference between these models in the high hydration dough section below.
PROFESSIONAL DESIGN
Famag mixers feature heavy duty chain overhead drive, with a high torque dual-belt final drive. FAG sealed industrial ball bearings are used for exceptionally long life. Construction is robust throughout, as attested to by the mixer’s substantial 66 lb. weight. Epoxy powder coating over a steel cabinet protects the handsome appearance of your Famag mixer.
Tilting or Fixed Head
The Famag Grilletta IM-5 mixer is available with either a tilting head that features a high lift drive and lift assist, or with a fixed head. The model with the fixed head is the IM-5, and the model with the tilting head and removable bowl is the IM-5S. The bowl is removable on the mixer with a tilting head, and is not removable on the mixer with a fixed head.
If you're mixing high hydration doughs we recommend you purchase a tilting head/removable bowl model so it's easier to remove the dough from the bowl, and to clean the bowl. It's easy to remove low hydration dough from the fixed head mixer than it is to remove high hydration dough, and cleaning the bowl after mixing low hydration dough is easily done with the bowl attached to the mixer.
HIGH HYDRATION OR HEAVY DOUGH
Thanks to the spiral hook’s action, mixtures that overtax other designs—such as pizza or bagel dough—are handled easily, quickly and efficiently in the Famag spiral dough mixer. Doughs of all kinds, from heavy to high-hydration artisan doughs, come out smooth, silky and perfectly developed.
The Famag IM-5S HH mixer is identical to the standard IM-5S Famag mixer, except that it has a special
sprocket that allows the mixer to run at a faster RPM. The spiral hook on this model runs at 80-300 RPM,
while the hook on the standard IM-5S mixer runs at 80-240 RPM. Click
here for the approximate RPM at each speed, for each model. The IM-5S HH mixer is designed specifically
for high hydration dough (over 75% hydration). If you aren't planning to make a lot of high hydration
dough, the mixer with the regular sprocket is a great option.
SUPER CAPACITY RANGE
Famag's Grilletta IM-5 mixes and kneads up to 11 lbs. of dough at 60% hydration (or more at higher hydration), but also handles batches as small as 1.7 lbs (0.8 kg) equally as well. In terms of flour capacity, this is 6.8 lbs (3.1 kg) down to 1.1 lb (0.5 kg). Capacity of the stainless steel bowl is 8.4 quarts. The kneading arm of the Famag IM-5S lifts high for bowl access and removal, and provides lift-assist.

Speed Based on Hydration
Variable speed mixers have a speed dial marked from 1-10. For normal dough with a hydration of 55-65%,
the mixer can be operated at speeds 1 through 5. With 65-75% hydration, at speeds 1 through 6-7, and
with dough over 75% hydration, at speeds 1 through 8-10. These are general guidelines, as dough characteristics
vary. If mixing dough that's less than 60% hydration, it's recommended to only fill the bowl to 50% capacity,
and mix for only 10 minutes at a time; judgment must be exercised in any case, to avoid kneading dough
so dry it’s outside of normal baking parameters, regardless of the hydration numbers. With dough over
60% hydration, dough can be mixed for up to 20-25 minutes before the mixer should be turned off for about
40 minutes.
FORWARD AND REVERSE MIXING
There are two buttons on the Famag mixer for controlling the direction of both the dough hook and bowl. The left arrow button moves the spiral hook in a downward motion, and the right arrow button moves the hook in an upward motion. The left arrow button can be referred to as the “forward” direction while the right arrow button can be referred to as the “reverse” direction.
Some users incorporate ingredients with the spiral hook turning in an upward motion, to reduce the amount of oxygen incorporated into the ingredients, and then switch to a downward motion to knead the dough. Others users prefer to mix with the hook turning in a downward motion from start to finish.
COLORS
Famag spiral dough mixers are available in a wide selection of colors. Dark Silver, Marina, and Emerald are pearl finishes that have a subtle pearlescent luster. Sparkle Silver has a brilliant sparkle to it that catches light more than the pearlescent colors will. Arctic White, Ruby, Maraschino, Tuscan Sun, and Raspberry have a glossy finish. Galaxy sparkles in gold, red, blue, and green over a black background. Because of the unique characteristics of the Galaxy color, 3” x 6” Galaxy color sample cards are available by U.S. mail at a cost of $7 (which includes shipping). I bought the High Hydration IM-5 with tilting head/removable bowl. The machine is expensive and amazing. It's a commercial quality spiral mixer in a compact size that exceeds the output needs of a small family kitchen. The tilting head/removable bowl for me, results in the ease of both cleaning and loading of ingredients that I seem to like to do in different places in the kitchen. The "HH" High Hydration option, was a small fee to upgrade, in case I ventured into more troublesome dough hydrations not achievable at home or a bakery without such a machine. I would say, that it is a recommended must-do option. Higher hydration sourdough loaves or 00 Napoleon pizzas, etc are amazing above 70% hydration. For those who think their Kitchen Aid Pro, Cuisinart Precision Master, Ankarsrum, etc are on the same level, you are all fooling yourselves. I set aside money for several months, as I debated buying a mixer of this quality and price point, but after having experienced it first hand, I wish I would have bought it sooner.
My complaint against Famag and the fix. Having a removable bowl means things won't be as tight as permanently fixed objects. With my mixer, there was a slight knocking noise as the bowl is rocking under tension from the dough and hook at higher speeds. The Fix: a 4x4 or 5x5 square inch of paper towel (single layer) placed under the bowl before latching it into the under carriage. I don't think my mixer is an outlier and this review is mainly meant to share this knowledge, which has further increased my appreciation of this machine.
I was also interested prior to buying, how small of a load could this mixer be effective at mixing? I've used it to mix many batches of as little as 400g of flour at 70-80% hydration.
I purchased an IM5 mixer (not the M5S) primarily for 75-85% hydration doughs. So far the mixer has been used for a few batches each of ciabatta, pizza in teglia dough, and focaccia, and it has been a treat to use when compared to the old KitchenAid. The dough is beautiful right out of the mixer, silky smooth with impressively developed gluten strength.
The mixer itself is quiet and cool running and appears to be a quality piece of equipment.
Don't be afraid if they're back-ordered either - this showed up about two weeks before Pleasant Hill's guess at a "back in stock" date. A very nice surprise!
This mixer has certainly made a positive impact on my sourdough and Neapolitan pizza dough however, the locking base on mine is slightly off so each rotation of the bowl hits against the metal back causing it clank. I'm certainly disappointed given the cost and high esteem which are given to Famag.
Works as advertised. The hard work of kneading bread becomes easy as pie! Awesome dough kneader.
When it comes to tools, I'm a "buy the best you can afford and cry once" kind of person and this machine falls into that category.
Like so many, I'm wanting to transition from home baking of breads and pizzas to baking for the public. Hand/short mixing and my 6qt Kitchen Aid taught me the rules and the Famag IM-5S is allowing me to dial in the recipes I will use outside of the home... while still at home! Something to note about Famag as a company and PHG as an importer/distributor... they are customer service oriented. Famag listened to the feedback they received about their once-straight-not-curved breaker bars being too far from the spiral and altered their product for the better.
PHG with its small teams and *amazing* customer service makes dealing with an Italian manufacturer more than a pleasant experience. No regrets on this purchase whatsoever.
This is my second Famag mixer. The first one was just too big for my needs, so I sold it to somone starting a pizza business and repurchased the smaller machine.
It mixes beautifully! So gentle and easy to use. Customer service was great...I was going to be out of town when it was expected to be delivered and was so happy when it arrived 2 weeks before I was to leave. Whenever I have a question, they give good answers and the issues are resolved--user error!
What a great purchase. This mixer doesn't even flinch when it gets to work. Works to store underneath kitchen cabinets but needs to be slid out to the edge to clear the cabinets and to get the bowl off and for cleaning. Added thick felt pads to the feet and I slide it all over the place on granite counters. There is no way I could lift it on / off the counters to use on a regular basis. Galaxy color is beautiful, though it would need to be placed in good sunlight for it to really sparkle and show all the different colors, otherwise, mine mostly looks dusty with just the under cabinet lights on it. I did scratch my bowl putting it through the dishwasher, so I hand wash now and put the whole unit back together before I slide it back into it spot under the cabinets.
Excellent mixer with outstanding results even with high hydration doughs. My first run was a 83% Asian milk bread and it turn out superb. The gluten was perfectly develop and separated from the bowl nicely. My only regret now is not having ordered the next size up.
If your goal is to make the best possible dough for Neapolitan pizza, sourdough bread, focaccia, or anything else that requires gluten development, look no further.
The Famag IM-5S is an absolute workhorse and will elevate your dough game 10x (compared to a standard KitchenAid mixer). Also looks great on the counter.
