Campbell's Pullman Cube Loaf Tin/Pan
Campbell's cube Pullman loaf tins (more affectionally known as "Campbell's cuties") are excellent for croissants and normal bread doughs. They're hand crafted in uncoated commercial grade aluminized steel. The smaller tin measures 3.1" and the larger tin measures 3.9".
Cube croissants gained major popularity in bakeries in cities like Seoul and Paris, where laminated croissant dough is baked in a square mold instead of the traditional crescent shape. They’re typically filled (cream, pistachio, chocolate, etc.) or glazed after baking. There isn’t one traditional French name—“cube croissant” is generally the standard term used in English.
The Campbell Pullman Cube Loaf Tin is available as singles, or in sets of four at a discounted price.
Note: Campbell's steel bakeware comes from the manufacturer with minor scuffs, like those shown in the photo here. These scuffs are normal and do not affect the use of the bakeware. Care Instructions
When washing your uncoated tin for the first time, hand wash in hot soapy water. Ideally dry them in a cooling oven. Once you have dried the tins, grease them up before every bake until a residue has built up then grease again as required.
Many people don’t wash the tin between bakes as this helps avoid the dough sticking, much like your favorite black iron pan.
IMPORTANT: Don't place the bread tin in the dishwasher. The harsh chemicals of the detergent will eat into the tin and damage it.

Recommended by Matthew J. Duffy in his rye bread baking course. I purchased and now use to bake rye bread, along with my other tall rye bread pan from PHG. I love the pan, but one thing would be great: please provide resource to help a home baker like me know the weight of bread dough to scale into this pan, especially if i plan to use if with the cover.
I nicknamed the bread I bake from this tin my "cutie" because it's the perfect smaller size a tin loaf!
My customers love the smaller size to make their own toast but not invest in a regular size if a small household. I have used for 100% rye, sourdough and yeasted. Bread comes out golden on sides. About 400-500g dough used. Use with or without lid to create the style you'd like.
A must have for your inventory; really anything from Campbell you should get! Solid craftsmanship to use over and over.
Love these square tins although I have had trouble with the dough sticking to them. May be a seasoning issue but I would recommend using parchment to line them, at least at first. You won't use much. I use these pans without the lid frequently as well.
