Brød & Taylor Folding Rack
The Brød & Taylor folding rack accessory creates a second level in the proofer, ideal for proofing two sheet pans or four loaf pans. While the Brød & Taylor proofer comes with one rack, which sits on the floor of the proofer, this folding rack doubles the usable capacity of your proofer! Sheet pans should be 14¼” x 12” (36.2cm x 30.5cm) or smaller. Loaf pans should be about 3” tall, so that the maximum height of the risen bread is 4” (10cm). Rack measures 14⅜” x 12¼” (31.2cm x 36.5cm). The shelf is 4" above the bottom of the proofer.

No more heating a whole room just to let my bread rise. I set the proofer on 80 F put the dough in, next morning I get ready to bake. After the KoMo grain mill this was my second best purchase. Well worth the money for both of them. I am making perfect Einkorn sourdough bread. Every body loves it. Mind you, I have never been much of a baker, a pie every now and then, that's it. Now at age 76 and being gluten-free for 4 years, sugar free too (because of lung cancer) I chose not to have chemotherapy or radiation after my operation, they took part of my lung out. So far so good, the diet helped, no more congestion or bronchitis. (I never smoked, not even one cigarette ) six weeks ago I found out I could eat Einkorn wheat without any problems. I bought the best baking equipment I could find, from Pleasant Hill (wonderful people, by the way), made my own sourdough starter and have been having sandwiches every day since. I have really missed crusty french bread. Only three ingredients, flour, salt and water. It also gives me more energy and I can sleep better. I keep the KoMo grain mill always on my kitchen counter, it looks really classy there. The proofer, when folded, is the size of a bathroom scale and slips under a cabinet. It's very easy to set up and take down. I might start brewing kombucha again which I gave up a long time ago. It was always a hassle in the winter, trying to keep the culture warm enough so it would ferment adequately. With the proofer, no problem.
This sturdy hanging rack helps maximize space in the unit and makes a big difference. Would be nice if it came with the Brod & Taylor Proofer. Glad I got it!
I bake bread a lot, mostly sourdough and artisan breads, using various flours and grains. This bread proofer has been highly touted on a bread-baking website I visit on a daily basis, and I'm glad I invested in it. It works exactly as it should, maintains a steady internal temperature, and my bread dough of all stripes have turned out perfectly, especially in the cold and dry environments that winter weather brings. I would recommend this highly to anyone for a number of reasons, it is reasonably priced and well worth the investment and has performed without any failures, disappointments or criticisms. I love the fact that it is light weight and folds down nearly flat, making storage a breeze, and not using valuable counter or cupboard space when not in use. (I have never used it to temper chocolate, so I cannot comment on that. )
I bought the Brod & Taylor dough proofer and bought the hanging rack with it. I bake most of the bread our family eats, using a lot of freshly ground whole wheat flour (I have a NutriMill flour mill from Pleasant Hill). We really like the bread and the rack has been very useful both in the dough proofer and as a cooling rack for the bread right out of the oven. I'm very glad I added it.
With temperatures fluctuating throughout the year it's nice to have a controlled environment to have consistency for bread making and fermenting. The unit is easy to set up and use as well as very easy to fold up and store. Menu button and temp +/- buttons are all that you need to easily set the unit. I haven't tried the slow cooker mode yet. Very pleased with how it operates, quality off workmanship, and reliability. Only improvement I would suggest is having the power cord plug in on back side rather than on end with the control panel. I meant to add, the hanging rack is easy to install and works very well. Only drawback is you can't leave it in the unit when folded up for storage... must store separately. Not a big deal as it takes up very little space. (Fits in with my cutting board storage).
UPDATE: After 3 mos of use, I'm still very happy with the unit. It has been very consistent when proofing bread and is perfect for fermenting.

Since I bought the Brod dough proofer, been looking for a rack that would allow me to use more of the space. This is it. Nice, fits the bill.
Now I can proof two sourdough boules at once in my Brod & Taylor proofer box.
I surprised my wife with the proofer and the rack as she is the baker in the house. She used it the next day to make bread sticks for a party. Works great, made two pans, they were perfect.
Winter is the time to bake my sourdough bread! However, I don't have a constant semi-warm place to proof the dough. Yesterday I used my new proofing box and for the first time I didn't need to constantly check the dough. Making pretzels is on my agenda this week and I'll be using the extra shelf. Excellent purchase!!!
