The flavor of dark brown sugar has notes of caramel, toffee, and mild-to-strong molasses. While white sugar is dry, brown sugar has more moisture, due to the molasses content. Light brown sugar and dark brown sugar are largely interchangeable; dark just intensifies the molasses flavor.
