Wheat, Hard White, Superpail, Zone-2

Hard White Wheat, 36 lbs.

This conventional/non-organic hard white winter wheat is ideal for bread making. Breads made with hard red and hard white wheats will be very similar; the main difference is that red wheat produces a fuller, heartier flavor, and the bread will have a slightly darker color. If you're just starting out with whole grain baking and don't know how to pick, we suggest starting with hard white wheat. Note: Don't confuse "whole grain white wheat" with store-bought "white flour"! White wheat kernels are actually light brown in color. Store-bought white flour, on the other hand, is essentially nothing more than the endosperm (energy-producing carbohydrate) part of the kernel, with nearly everything nutritious removed in the interest of indefinite after-milling shelf life... which benefits huge commercial millers, at the expense of your health and the character of your food.

Ideal for Baking

Our grain is triple-cleaned. It's also been tested, in the most meaningful way possible: By baking bread with it. You can depend on wheat from Pleasant Hill Grain to make bread and other baked goods that rise well, taste wonderful, and are packed with wholesome, natural nutrition! For those who may want to sprout some, our wheat is sproutable. Sprouting results may vary. Our current lot of hard white wheat has a protein content of 13%.

Beat oxidation

In whole-grain foods, the plant's cellular walls protect nutrients from oxidation. The process of oxidation begins to occur as soon as grain is ground, exposing the cell's contents to oxygen in the air. Flour that is several days (or more) old, has been exposed to oxygen that inevitably diminishes its nutritional value. The way to get full nutrition from whole grain foods is to mill them when you need them, right in your kitchen. Modern high-speed grain mills make it fast and easy to enjoy the freshest, best tasting and most nutritious food imaginable!

Convenient & safe storage

Our wheat comes in five-gallon buckets (or pails... another name for the same container.) The net (contents) weight of the grain is 36 lbs. When you store grain at home, it needs to be protected in a couple of ways. First, it needs to be protected from a variety of little critters who'd like to get to it before you do. Weevils, for example. And isn't this interesting: Chances are you've never seen weevils in the white bread or crackers you bought from the store. That's because weevils put no stock in media campaigns from white-flour milling conglomerates; rather, they know what's good for them, and they'd come after your grain from miles around if you let them. And mice have good nutritional judgment, too. Not that there's ever been a mouse in your house, but if there was... you wouldn't want it having access to your grain. Secondly, grain needs to be kept dry. The grain we sell is all dried to a very low moisture level that's optimal for storage and baking and guarantees that you get the most grain for your money. You need to protect your grain from picking up excessive additional moisture, which can be drawn from the atmosphere. The buckets our grain comes in provide full protection against storage risks. They have airtight gasket-sealed lids, Mylar liners, and oxygen absorber packets that remove the oxygen from the air in the bucket after we put the lid on. The O2 absorbers leave an atmosphere of nitrogen in the bucket, because air consists almost entirely of oxygen and nitrogen. (The oxygen absorber packets themselves are completely food-safe, being made of powdered iron and salt, which are kept separate from the product itself.) Our buckets safely lock out pests, and biological processes are put "on hold" in the Mylar protected, oxygen-free nitrogen atmosphere, so your grain enjoys complete peace and quiet until you want to use it. Note: If you don't already have a bucket lid removal tool, they make lid removal easy (see lower section of this Web page). Super Pail packaging is the "gold standard," the ultimate protection for your grain! Super-cleaned All of our grain is triple-cleaned (also called "triple washed") to ensure purity and protect your grain mill from any foreign objects. (Grain that isn't sufficiently cleaned may contain small stones that will damage or destroy a grain mill... not to mention that you don't want such things in your food!)

Shelf Life

Our hard white wheat has a shelf life of 10+ years when unopened and stored in a cool, dark, dry environment.

Non-GMO

All of Pleasant Hill Grain's whole grain products are natural (non-GMO). This applies equally to both the Organic and the Conventional (Non-Organic) grain. Also, PHG does not sell any grains, beans, lentils, pulses or seeds sourced from China.

Uses & History

White wheat ( triticum aestivum) is a gluten-containing grain that’s very similar to red wheat, but has a sweeter, milder flavor and lighter color. There are two kinds of white wheat: hard white winter wheat, and soft white spring wheat. The wheat for sale on this page is hard white winter wheat.

White wheat is a hybrid grain, which means that older varieties of wheat with qualities such as disease resistance, weather tolerance, and high protein content, were crossed to produce a crop that has all the best qualities for bread baking and high yields.

Hard wheat has a higher protein content than soft wheat, and more protein translates to stronger gluten development in baked goods. This means that hard wheat is the best variety of wheat for making bread, pasta and pizza dough with. Soft wheat is ideal for cookies and pastries.

Hard winter wheat’s protein content typically ranges between 10-12%. Hard winter wheat grows predominately in the southwestern and mid-western prairie states whereas hard spring wheat will grow best in the Dakotas, Minnesota, and Montana.

Hard white wheat can be ground into flour, flaked (rolled), or cooked and eaten as a side dish similar to rice. White wheat is high in iron, protein, and fiber. It’s a versatile, delicious, and nutritious choice for everyday baking!

To cook hard white wheat, it’s best to soak the grain overnight. Soaking the grain will ease digestion, make the grain’s nutrients easier to absorb, and shorten the cooking time. To cook, add the whole or cracked, pre-soaked white wheat berries to boiling water (2.5 parts water to 1 part grain) for 45 minutes to an hour. The cooked wheat can be used to make grain salads, or to put into casseroles or soups.

If you’re transitioning from white bread to whole wheat bread, using white wheat is an ideal wheat to start with because of its mild flavor, and white color. We recommend you begin baking with half white flour and half whole wheat flour, and increasing the percentage of whole wheat flour over time. This should make the adjustment easier, especially for children. If you’re unsure whether red or white wheat would be better, we suggest getting a sample of each to find out which you enjoy the flavor of better. Grain samples can be purchased here.

Exceptional Value of Bulk Grain

It's well known that basic natural foods tend to be lower in cost and much higher in nutrition than processed commercial choices, but we were still a little shocked when we compared the cost of a staple like whole grain wheat, to items on the shelves at a local grocery store. Our grain comes packaged 45 lbs. to a bucket, so we're reporting each cost here, for that same net weight. The cost of living index in Nebraska is comparatively low, so processed foods like the examples shown here are priced even higher in most areas. We came away from this exercise with a heightened appreciation for the low cost and exceptional value of quality basic foods like whole grain wheat!

Bucket Lid Wrench

Don't be afraid of the plastic construction of this handy lid removal tool. We've used them for years here at PHG. They work great and we've never had one break.

Overall length of the tool is 8.25".

Note: Some bucket lids have several points around their lower lip that must be snipped with a cutting tool prior to removal. No matter what sort of tool you use to pry the lid off, if you're working with that sort of lid then it is indeed necessary to snip the lid at those points, first. Such "snip points" vary in appearance and may or may not be marked with words like "Cut Here" or with a scissors symbol. Another type of lid has a circumferential "tear strip" around its bottom edge. With such lids you may not need a lid removal wrench to use after pulling the tear-strip away, but one can be helpful to those with hand weakness due to arthritis or other reasons.

Brod and Taylor Bread Proofer

The Brod & Taylor Dough Proofer makes wholesome, made-from-scratch baking easier than ever with an optimum proofing environment plus easy storage. Set it lower for a longer “cool rise” or turn up the heat to give your yeast a boost on a cold winter day. A large window gives you a full view of the spacious interior where your largest bowl or full sized loaves fit easily. There’s no need to cover your dough as the included water tray keeps humidity at an optimum level.

The innovative Brod and Taylor folding bread proofer accurately maintains the temperature you set, in the range of 70–195°F (21–90C), in five degree increments. Its cabinet is built of super tough reinforced polypropylene with a clear viewing window. The stainless steel wire rack, power cord and all other parts fit inside the proofer when folded. Inside dimensions are 14.75” x 12.5” x 8.75” high. Outside dimensions are (open): 18” x 14.5” x 10.5” high and (closed): 18” x 14.5” x 2.75” high, so it stores very easily.

Included with the Brod and Taylor Bread Proofer & Slow Cooker is a 55-page booklet with recipes for yeast breads, sourdough, yogurt, butter, cheese, kefir, kombucha, tempeh, and slow-cooker recipes like chuck roast, pulled pork and caramelized "black" garlic.

Pizza dough... artisan sourdough... yogurt... the Brod and Taylor dough proofing box provides a warm, humid environment for more consistent results with rising yeast dough recipes. These include organic whole grain recipes, made-from-scratch bread loaves, pastries, gluten-free yeast bread recipes, soft pretzels, doughnuts, focaccia, cinnamon rolls, and croissants, to name a few. The Brød and Taylor bread proofer is also the ultimate yogurt maker, developing perfect yogurt in either one large, or several smaller containers. Nothing's easier than making delicious yogurt at home with this machine.

In addition to its outstanding core performance as a dough proofer, this versatile Brod and Taylor product is also a slow cooker, yogurt maker, hot plate and more!

Brod and Taylor's innovative bread proofing box is a multi-use kitchen tool ideal for home bread bakers—or anyone with an appreciation for scratch recipes, organic cooking and wholesome ingredients. Designed as the ultimate solution for rising yeast dough, the proofer’s consistent low-heat also works as a yogurt maker, chocolate tempering machine, bread crisper, plate warmer and more.

When your bread's been finished, your Brod and Taylor proofer is the ideal bread warmer, keeping it at perfect serving temperature. One elegant, easy-storing appliance does it all, conveniently and efficiently. It’s a great new tool for any kitchen where homemade baking is enjoyed, and it has really taken off among our customers at Pleasant Hill Grain.

The Brod and Taylor bread proofer now has a slow cooker mode! In slow cooker mode, temperatures may be set between 85–195°F (29–90C), in five degree increments. For slow cooking recipes that recommend a low setting in traditional slow cookers, set the temperature to the maximum setting of 195°F. Always use a lid on the pot when slow cooking. The rack and water tray are not used when slow cooking. For best results, use a heavy duty Dutch oven or stock pot with a tight fitting lid. Maximum dimensions for a slow cooker pot are 11.5" diameter and 8.75" high, including handles and lid.

One of the things we like most about the Brod and Taylor bread proofer is the toughness of its construction. Between the details of the design and the quality of its materials, our experience—after an extended period of offering this product—is that breakage is a non-issue. It assembles very quickly, feels solid, and truly is a rugged, reliable performer. We've used one in the PHG test kitchen for years and endorse it enthusiastically.

Michael Taylor, an engineer and longtime bread baker, is well acquainted with the homespun solutions bakers have tried in search of a more controlled dough rise. An inventor at heart, Taylor saw a real problem that needed a remedy. Home bakers needed a tool that offered the confidence and convenience of a professional proofer in an affordable, versatile, space-saving design. After years of careful research and testing he created the world’s first folding home proofer, and it's truly an outstanding product.

Cook's Illustrated recommends the Brod and Taylor folding proofer, finding that it performs well and is easy to use and clean.

Gamma Seal Lid, 12 Inch, Set of 3

This remarkably practical two-part gadget transforms a standard plastic bucket into a rugged, gasketed, resealable storage container that's both air-tight. Just snap the outer ring down onto your bucket. The threaded lid turns easily with molded-in grip bars. These lids are heavy duty for years and years of service. The ring has a polymer gasket where it sits against the lid of your bucket, and the threaded lid has another polymer gasket, giving the container an air-tight seal that excludes not only such freeloaders as mice and insects, but moisture too.

The Gamma Seal lid transforms an ordinary bucket into the ideal storage vault for an endless list of materials from grain and other foods to laundry products, pet food, tools, documents, silk ties, lawn and garden products, bait, seeds, oil, disaster supplies... and on and on. They also make lightweight, super-strong totes for camping gear. And did we mention that they're stackable? Our customers come back for more of these. (Make your life easier by ordering a few more the first time!)

All Gamma Lid plastics are food safe, including "heavy-metal-free" pigment in the colored lids, and all Gamma products are BPA-free. Gamma Seal lids do not include the bucket. Please note that color tint of plastic buckets can vary, so Gamma Lid colors may not perfectly match with the color of any given plastic buckets.

These 12" Gamma Seal lids fit 3-1/2 gallon or 5 gallon or 6 gallon buckets with standard top outside diameter of 11-3/4" to 12-1/8". If you want to use Gamma Seal Lids on buckets you already have, be sure your bucket tops have an outside diameter that falls within that range. (The buckets offered by Pleasant Hill Grain all have the proper top diameters to accept their respective size of Gamma Seal Lid.)

To install we recommend a large rubber mallet, or lay a 2x4 across the lid and strike with any heavy hammer. If a lid ring doesn't want to start on a bucket easily, submerging the ring or bucket rim (or both) in hot water will ease the connection.

Lids are sold in sets of three of each color. Colors include white, black, green, yellow, red, blue, and orange.

Note: If using oxygen absorbers in plastic buckets, you need to use standard hammer-on lids (not Gamma Lids). Gamma Lids are airtight, but are not designed to counteract the force of pressure that's created when all of the oxygen in the container is removed by oxygen absorbers. Once the standard lid is initially removed to start using the contents, a Gamma Lid can be used to re-seal the bucket against moisture, rodents and insects. A quality bucket and hammer-on gasketed lid will provide a fully adequate oxygen barrier for at least a couple years of storage. For even longer term oxygen-free storage, inside your buckets you can also use Mylar liner bags which, when heat-sealed shut around your food, will effectively block oxygen permeation for years and years.

Sharing the gift of great wheat
By Karen M. in NM on 4/27/2016 Verified Buyer

This weekend I made twelve loaves of different kinds of bread to share with my family, neighbors and co-workers. I used a combination of hard white and hard red wheat for sandwich style, brown, soaked, sourdoughs and honey wheat breads. The wheat was amazing. So easy to use, from bucket to grinder, to soul satisfying breads. I have praised Pleasant Hill's grains with probably fifty people this week. I believe that sharing something so completely homemade says thank you in a very special way. Thanks to Pleasant Hill Grain for making this possible.

Fresh and Flavorful
By Elizabeth B. in LA on 4/10/2016 Verified Buyer

I ordered a pail of the hard white wheat berries when I invested in my KoMo mill. One cup of berries grinds up into 1-1/2 to 1-3/4 cup of flour. You know that rancid smell whole wheat flour gets when it's been sitting on the shelf for awhile? This stuff doesn't have it. Apparently I've never baked with fresh wheat flour before, despite my best efforts. The aroma and increased rise are a revelation. I should have bought the mill and these berries sooner.

Health benefit of Wheat
By Susan G. in WA on 7/11/2017 Verified Buyer

I don't bake bread. I put a teaspoon of wheat in a cup with 1/4 cup boiling water and then next morning I have it as my vitamin B!
My body doesn't assimilate factory vitamins, but this practice has kept my heart steady and avoided arrhythmia problems!

Hard White Wheat
By victoria p. in CA on 6/05/2016 Verified Buyer

The wheat is very clean and dry. We've made two loaves of crusty bread so far (ground with our new Nutrimill) and have had excellent results. The shipping container (Super Pail) was very robust and had a sealed inner-liner. The only complaint I have is that the lid is difficult to remove - cutting tools are required - especially since I wanted to re-use. Instructions for opening would be a good thing to provide. The 50 lb size is a bit unwieldy so a 15 - 20 lb option for home users would be good.

Excellent Grain
By Hank F. in CA on 4/28/2016 Verified Buyer

I've purchased my hard white wheat from a local natural food store for years. They ran out and were not able to fill my order, so I turned to Pleasant Hill Grain. I won't go back! Your hard white wheat berries are superior in every respect to my previous supply. Fresh, clean, and the flour outperforms all previous flours for tenderness, loft, and even in activity during bulk and final proofing. Superior in every respect. Thank you!

Best tasty A/P flour ever!
By Therese T. in CA on 5/02/2017 Verified Buyer

Stores great and hardly ever find extraneous surprises in the 3 years I've been getting it. Sift through tam for my bread flour (and bran for bran muffins). Sift again very fine for A/P flour for everything else. The only difference is that there is this nutty delicious extra flavor to my baked goods that folks have come to eagerly anticipate.

Hard white wheat
By Roy B. in PA on 12/20/2016 Verified Buyer

Great wheat berries for my mill. For pure wheat bread I do add gluten though. Grains are clean of stone and bugs. They are perfectly acceptable with no hashgacha, because they are so clean. A great value, with fantastic freshness.
