Our certified organic soft white wheat berries are triple-cleaned and perfect for making baked goods prepared from batters, including biscuits, cakes and whole grain pastries! 

Convenient & safe storage 

Our soft white wheat is certified organic and non-GMO, and comes in six-gallon buckets (or pails... another word for the same container), containing 41 lbs. net weight. When you store soft wheat at home, it needs to be protected in a couple of ways. First, it needs to be protected from a variety of little critters who'd like to get to it before you do. Weevils and rodents, for example. You also need to protect your soft white wheat berries from picking up excessive additional moisture, which can be drawn from the atmosphere. The buckets our soft wheat comes in provide full protection against these storage risks so your grain enjoys complete peace and quiet until you want to use it, even if that’s ten or twenty years from now. They have airtight gasket-sealed lids and oxygen absorber packets that remove the oxygen from the air in the bucket after we put the lid on. The O2 absorbers leave an atmosphere of nitrogen in the bucket (because air is mainly oxygen and nitrogen). If you don't already have a bucket lid removal tool, they make lid removal easy (see lower section of this web page). Note: Our organic soft wheat does not come packaged in a Mylar bag. 

Beat oxidation 

In whole-grain foods, the plant's cellular walls protect nutrients from oxidation. The process of oxidation begins to occur as soon as grain is ground, exposing the cell's contents to oxygen in the air. Flour that is several days (or more) old, has been exposed to oxygen that inevitably diminishes its nutritional value. The way to get full nutrition from whole grain foods is to mill them when you need them, right in your kitchen. Modern high-speed grain mills make it fast and easy to enjoy the freshest, best tasting and most nutritious food imaginable! All of our soft white wheat is triple-cleaned to ensure purity and protect your grain mill from any foreign objects. (Soft Wheat that isn't sufficiently cleaned may contain small stones that will damage or destroy a grain mill... not to mention that you don't want such things in your food!) Trace amounts of wild wheat and wild mustard seed may be present; these are harmless and have no influence on baking results or flavor.

Shelf Life 

Our organic soft wheat has a shelf life of 10+ years when unopened and stored in a cool, dark, dry environment. 

Non-GMO 

All of Pleasant Hill Grain's whole grain products are natural (non-GMO). Also, PHG does not sell any grains, beans, lentils, pulses or seeds sourced from China.

Soft white wheat flour

Soft Wheat Uses

Soft wheat (triticum aestivum)has a low protein content and a high starch/carbohydrate content. Consequently there’s little gluten development when using soft wheat flour, and the gluten that will develop is of low strength. Because of these characteristics and its mild flavor, soft wheat is ideal for making light and tender whole grain biscuits, pancakes, pastries, quick breads and more!

To give you an idea of how soft wheat differs from hard wheat, the protein content of soft wheat is typically around 7-9%, while hard wheat typically has a protein content of 10-15%.

In the U.S., soft wheat is mainly grown east of the Mississippi, although some is grown in the Pacific Northwest.

Soft wheat can be either red wheat or white wheat; ours is organic soft white wheat, and like all of our grain, it’s non-GMO. Soft wheat is typically a winter wheat, which means it's planted in the autumn, grows a few inches tall before it’s covered with snowfall through the winter, and lies dormant until the ground warms up in early spring. In the early spring the wheat resumes growth until it’s ready to be harvested. Winter wheat tends to have slightly lower protein content than spring wheat.

Whole grain soft wheat flour is the same thing as whole grain pastry flour.

Make your own whole grain cake flour by measuring 1 cup of finely ground soft wheat flour then substituting 2 tablespoons of that flour with 2 tablespoons of cornstarch.

To make whole grain all-purpose flour at home simply combine hard wheat flour with soft wheat flour at a 50:50 ratio. Our customers have been very happy with their results when mixing hard white or hard red wheat with our soft wheat for their general purpose whole grain flour.

This organic pastry wheat is not a good choice for making bread dough. For dough-bread making, the most popular choices are the hard red or hard white wheat berries as well as spelt, kamut or rye. We also offer durum wheat for making pasta.

Bucket Lid Wrench

Don't be afraid of the plastic construction of this handy lid removal tool. We've used them for years here at PHG. They work great and we've never had one break.

Overall length of the tool is 8.25".

Note: Some bucket lids have several points around their lower lip that must be snipped with a cutting tool prior to removal. No matter what sort of tool you use to pry the lid off, if you're working with that sort of lid then it is indeed necessary to snip the lid at those points, first. Such "snip points" vary in appearance and may or may not be marked with words like "Cut Here" or with a scissors symbol. Another type of lid has a circumferential "tear strip" around its bottom edge. With such lids you may not need a lid removal wrench to use after pulling the tear-strip away, but one can be helpful to those with hand weakness due to arthritis or other reasons.

Gamma Seal Lid, 12 Inch, Set of 3

This remarkably practical two-part gadget transforms a standard plastic bucket into a rugged, gasketed, resealable storage container that's both air-tight. Just snap the outer ring down onto your bucket. The threaded lid turns easily with molded-in grip bars. These lids are heavy duty for years and years of service. The ring has a polymer gasket where it sits against the lid of your bucket, and the threaded lid has another polymer gasket, giving the container an air-tight seal that excludes not only such freeloaders as mice and insects, but moisture too.

The Gamma Seal lid transforms an ordinary bucket into the ideal storage vault for an endless list of materials from grain and other foods to laundry products, pet food, tools, documents, silk ties, lawn and garden products, bait, seeds, oil, disaster supplies... and on and on. These 12" Gamma Seal lids fit 3-1/2 gallon or 5 gallon or 6 gallon buckets with standard top outside diameter of 11-3/4" to 12-1/8". If you want to use Gamma Seal Lids on buckets you already have, be sure your bucket tops have an outside diameter that falls within that range. (The buckets offered by Pleasant Hill Grain all have the proper top diameters to accept their respective size of Gamma Seal Lid.)

To install we recommend a large rubber mallet, or lay a 2x4 across the lid and strike with any heavy hammer. If a lid ring doesn't want to start on a bucket easily, submerging the ring or bucket rim (or both) in hot water will ease the connection.

Lids are sold in sets of three of each color. Colors include white, black, green, yellow, red, blue, and orange.

Note: If using oxygen absorbers in plastic buckets, you need to use standard hammer-on lids (not Gamma Lids). Gamma Lids are airtight, but are not designed to counteract the force of pressure that's created when all of the oxygen in the container is removed by oxygen absorbers. Once the standard lid is initially removed to start using the contents, a Gamma Lid can be used to re-seal the bucket against moisture, rodents and insects. A quality bucket and hammer-on gasketed lid will provide a fully adequate oxygen barrier for at least a couple years of storage. For even longer term oxygen-free storage, inside your buckets you can also use Mylar liner bags which, when heat-sealed shut around your food, will effectively block oxygen permeation for years and years.

This was my 3rd purchase from Pleasant Hill Grain, and I'm happy as usual. The wheat came in a few days, and its packaging was excellent as always. Vacuum sealed incredibly tight in a Mylar bag inside a 6 gallon food grade bucket. Just add a screw-on lid and you're good to go. I like to mix soft white wheat into my hard white wheat when I make bread so that it is a little fluffier. This will do nicely.

It honestly couldn't go any smoother. I'm an organic freak. I have to eat a very specific diet because I'm allergic to everything. So I make 95% of my food from scratch other than olive oil, etc. With the over processing of flour and grains, I purchased myself a mill and have been milling my grain for flour along with a variety of other uses. The grain was delivered with no issues. Every bucket has been clean and well packaged, air tight in very sturdy rodent proof containers. If they keep up this kind of quality, I may be purchasing from them for a very very long time. You will not be disappointed. I think of no other place to purchase my grain, I give it a massive AAAAA+++++!!!!!

I've purchased and continue to purchase various products from your company. The grains I receive are always properly vacuum sealed, ready to store for long term. The grains are fresh non-gmo products. I honestly couldn't be more pleased! I hesitate leaving great reviews because it seems as though it goes to the company's head and their service seems to decline over time. But, I have to give credit where credit is due, you guys are fantastic! Excellent service and products! Let's do what we can to support these non-gmo growers!!! You guys are awesome!

Never purchased whole grains before. Spent about a month researching online sources. I always found my way back to PHG. Ended up purchasing over 200 pounds of grains and extra storage buckets and lids. The information provided on the website about each product is most useful. I ended up printing the info out and attaching to my storage buckets. Customer service called prior to shipping to verify my address since it was different than billing. I received email notifications on an back ordered items. I am very happy with with the service and products I purchased.
