This 70-mesh flour sifter, made by L'Equip, has an 8 cup capacity and sits on top of the mixer bowl. Starting with whole grain flour, the sifter separates the bran, producing very fine flour that's ideal for making pastries, cakes, and cookies. The remaining bran can be used in a variety of other products including baked goods, smoothies, soups and casseroles.

Under the rim of the mesh disk are three short (1/8") pins that fit into three corresponding sockets in the hopper rim below. For the sifter to work properly, the pins need to be in the sockets before use. To do this, first align the slot of the sifter's drive shaft over the cross-pin of the mixer's shaft, then rotate the mesh disk until the pins drop into place. This is described in the user instructions, but we point it out because the pins are fairly small and would be easy to overlook.

Marvelous addition to my Bosch mixer accessories!

I have had a Bosch Universal Mixer for over 35 years. I have most of the accessories but the sifter was not one I had. I read the reviews and there were some quite negative reviews about how the sifter did sift well, wouldn't sift enough flour, etc. However, I liked the idea of being able to get all the benefits of whole wheat without the bran. As soon as I got the sifter I ground 9 cups of whole wheat and set up the sifter and began to sift the flour. I put 4 cups of the ground flour at a time into the sifter and started the motor. I sifted on setting 3 and it took about five minutes to sift all my flour. I got wonderful bran to make bran muffins, to add to other recipes that I want wheat bran in. The flour I got after sifting made a bread that was a rich white/yellow color, tasted wonderful, and was so moist. I found none of the issues that people had talked about! I would recommend this device to anyone.

Good bye tired arms

I use to put my fresh ground flour in a fine mesh sieve and then shake it over a bowl. It was very tiring and took a long time to do small amounts. Using the Bosch sifter has made life so much easier. It is a very fine mesh and takes out a LOT of the bran and makes a very fine flour. It is easy to attach to my mixer, I fill it and walk away for a few minutes. I keep a few containers of some sifted flour and some un-sifted of hard and soft wheat and then I can play with the % I add of each. If I need a lot of structure and less bran then I might use a 50/50 mix. The great thing is I still get to use my fresh ground flour and the time saved from not hand sifting. Good bye store bought AP flour. So glad I found it!

It doesn’t get the flour to a true “white flour” state. It does make it easier/cleaner it sift most of the bran/germ out. All in all it’s a fun gadget to have. I wish they made different gage screens.

Moderator : In fairness to Bosch, white flour definitely is not what they intend the sifter to produce. To achieve that, the same processes used in commercial milling would have to be employed, with the result that, just as with store-bought white flour, virtually every natural nutrient would be removed. Perfect for finely sifted flour

The sifter works just as it says it will. It sifts flour to a very fine level. I bought it to sift freshly milled four in the hopes of being able to improve my efficiency in the kitchen when baking bread (I like to remove a bit of the bran on occasion ). It isn’t really faster than doing it by hand, but you can dof things while it's sifting and for me that’s a big deal... I really hate sifting. My one wish for the sifter is that it have screens of different sizes (or that you could purchase them). The flour that comes out of it is very fine, a little too fine for my purposes. I was hoping for a high extraction flour (85%), I’m guessing it’s more like 70%. Would be a perfect tool if you use all freshly ground flour and want a tool to remove lots of bran so that you can make cookies, cakes etc.

Great for your cake and pastry flour

It’s great for your home milled flour. If you bake a lot of cakes and pastries this works well. I’m use to sifting flour by hand and it takes for ever. And when sifting flour by hand you don’t get all the bran out. This gets the bran out and makes a nice fluffy flour. Which you need when making Japanese cheesecake or croissants.

I bought this on 12/29/2011 and haven't used it much. Not because it doesn't work well; it works fine. I just found that I really don't need it much. Frankly, if I knew another Universal user I'd give it away. Typical high quality.

Great sifter - not so much for home milled flour

I was very excited to receive this Bosch sifter attachment as I grind my own flour at home, especially since flour is so scarce in the stores these days.
The sifter works fantastic on regular flour, and also does a decent job of whole milled flour, except it has about a 50% extraction rate. Ideally the sifter would come with interchangeable mesh varying from 40 mesh to 70 mesh. That way you could decide what extraction rate you desire.

The sifter unit sets up easily on the Bosch Universal plus, on top of the mixer bowl, and the process can be sped up by increasing from a one to a two or three speed. No flour seeps out or is lost - very nice compared to hand sifting.

Another issue noted was the clean up of the mesh after sifting was done. I tried every way including using a brush, shaking and tapping to get the flour out without using any water. I resorted to wrapping just the mesh disc in a plastic bag and storing it in the freezer to avoid any weevils or rancid flour for next use.

Still experimenting with the sifter - overall very happy to have something that quickly and efficiently sifts flour. Still would like Bosch to design replaceable mesh discs for varied extraction rates.

This sifter is amazing! I've been using it to get a fine pastry flour with freshly ground soft white wheat, or for lighter loaves of bread with hard white or red wheat. I grind very finely using my KoMo mill, then fill the sifter about half full and turn on to setting 1 and let it do its thing. I usually use the sifted bran to make bran flakes. It's a bit difficult to get the remaining flour out of the nooks and crannies, so I don't really try too much. You can the sifted flour to make your own sourdough starter too. Works wonderfully!

So up front you should know I just detest sifting flour, hence the purchase. This attitude might skew my review because I just don't like messing with it. I mill my own flour using a Mockmill 200 that produces a nice fine product. When making cookies or pie pastry I wanted to sift out some bran--and this accessory did accomplish that and seemed to extract out a surprising amount. I would estimate that about half would sift through leaving half in the hopper. Mixer was used at speed 3. The remaining stuff in the hopper felt far grainier and was darker in color, the sifted flour very fine and zero granular feel. But it is a nuisance. It is bulky, requires a dedicated ring and lid making it tough to store in my already cramped kitchen. I tried to brush off what I could with a pastry brush, as you are directed to not wash it and I saw in other reviews it may mold if you do. So, decided to keep the box and will store in there in the basement and pull it out as needed. Typically though, if something is banished to the basement it means it is not as useful as hoped. I guess time will tell if I actually use this. Wish I would have bought an oatmeal flaker instead. Now what to do with the leftover bran remnants?? Probably some seriously high fiber pancakes I suppose: )
