Bosch ER2 Stainless Locking Bowl for Univ. Plus

The Stainless Steel Bowl (MUZ6ER2) for the Bosch Universal Plus mixer has a polypropylene center drive shaft column, enabling the Universal's standard wire whisks and BreadMaster dough hook (as well as the accessory cookie paddles and bowl scraper) to be used in it. This bowl is sold without dough hook, whip drive or whisks, because those pieces from the Universal Plus mixer's standard plastic bowl fit this bowl.

This bowl locks onto the Universal Plus mixer's low speed drive (the same place the standard plastic bowl mounts). The bowl's drive shaft detaches in seconds from below for quick, easy cleanup.

Capacity is 6.5 quarts (approx. 14 lbs. of dough of at least 60% hydration).

Recommendation for Challah or Bagel Dough

Kneading very low hydration dough? The center-column bowl included with the mixer on this page is perfect for making large batches of cookie dough and whole wheat bread dough (up to 14 pounds) as well as smaller batches of low hydration dough like challah or bagel dough (up to 10 lbs). For large batches of low hydration dough, however, we recommend using the ER1 stainless mixing bowl. A full 14 lbs of dough with a hydration as low as 40% can be kneaded in the ER1 bowl. The ER1 bowl has been in service for 35+ years and is designed specifically for kneading a large volume of extra heavy dough.

The bowl includes a splash ring and center cover. Mixer, drive shaft and bowl tools are not included.

This bowl does not fit older Universal mixers, including the model 6622 or 6610 or previous. The ER2 bowl does fit the NutriMill Artiste mixer.

I have used this about a dozen times now, and it appears to be a good product. I feared the center post would be a pain to clean, it's not. It cleans up beautifully. I like that the bread dough can be left to rise, or it can go to the fridge for no knead or to the proofer without having to dirty up another bowl. It's not overly heavy to lift and handle. I wish the stainless bowl would be an option instead of the plastic bowl, but then having two bowls comes in handy sometimes. This would have gotten 5 stars if it had a handle like the Kitchen Aid.

In addition to the Bosch Universal Mixer, I ordered the stainless steel bowl as well, so now I have 2 mixing bowls. Today, I made 6 loaves of bread in one bowl and 6 dozen chocolate chip cookies in the other bowl without having to stop and wash a bowl between mixing! Such convenience... I just kept right on baking, and then washed up later. Everything was finished so much faster. I found I am able to get twice the amount of mixing done in half the time with my extra bowl.
