Grandma Eloise's soy lecithin powder, from Kitchen Kneads, has a high source of natural choline and can be used in many forms of baking applications. Not only does it help keep bread together, but it adds many nutritional benefits. Lecithin can produce a tender texture in whole grain breads as well as extend the shelf life of homemade breads.
Our lecithin powder is made from raw, natural liquid lecithin (non-GMO)—a natural plant product. The result is a highly palatable and nutritious food supplement that contains no artificial colors, preservatives, sugar, starch or animal by-products. Lecithin promotes the buildup of nerve and brain tissue (about 1/3 of our brain and 1/5 of our nerves are made of lecithin) and helps to lower bad-cholesterol levels.
Use lecithin in baking breads, rolls, muffins, biscuits, pancakes, etc., by adding approx. 3 Tbsp. per 3-4 cups of flour. As a 100% natural emulsifier, lecithin improves moisture tolerance and uniform suspension of ingredients and shortens mixing times. Makes a great thickener. Bread texture and elasticity are improved, and crusts are more tender. Fats and oils are stabilized, reducing rancidity and prolonging freshness. Directions are included on the label for incorporating lecithin in bread recipes, and for using lecithin to replace commercial vegetable oil.

Grandma Eloise’s Lecithin is an ingredient I would hardly do without in my sour dough bread recipe.

I add letchithin to my bread. The bread always turns out light and airy and delicious!!
I use the Lecithan every time I bake bread to help with a consistent loaf of bread. This addition helps with the shelf life. Usually after the first day you can tell that it is day old bread. When you use the lecithan it is good for about three days. I love it and think it makes a huge difference in breadbaking!
I use this with most of my breads. Most breads are mixed flours, whole wheat, rye, all purpose. I am pleased with the consistent quality of the breads. Good crumb and height to the loaves! I usually use 1/2 to 1 tbs to a cup of flour for most recipes. I'm happy with the customer service. All my questions were answered and shipment was prompt! I WILL continue to order from Pleasant Hill Grain.
Worked well with magic butter
Making bread at home requires a few ingredients you can not find in most stores. This is one that is a must and PHG had it and shipping was fast.
