Flax Linen Baker’s Couche

Couche (Pronounced COOSH) is a French word meaning “couch” and in bread baking it refers to a canvas cloth used to rise baguettes on. The yeast and flour which develops on the canvas over time gives the baguettes their characteristic brown crusty exterior; because of this it’s best to simply scrape the cloth to clean off any stuck on dried dough, rather than washing it with soap and water.

This professional grade flax linen baker's couche is great for homebakers and professional bakers alike! The couche supports proofing bread dough and is especially useful for baguettes. Placing dough between couche folds helps shape the dough and prevents the doughs from proofing into each other. The couche also wicks away outer moisture from the dough to help develop a skin, hold the final shape, and develop a crisp crust. The couche is made of 100% natural flax linen and is available in two sizes: 24" x 36" or 28" x 36."

Before using, dust the couche with white flour or rice flour to prevent the dough from sticking.

Don't machine wash the couch. Simply shake or brush off excess flour and air dry. If dough sticks, allow to dry and scrape off. Roll up to store.
