Fibrament Baking Stone

A baking stone can take your baking results to the next level. Home ovens create heat that's uneven and erratic. A baking stone with the correct properties adds mass that bakes your bread, pizza and other foods much more evenly than otherwise possible. It also adds stable, predictable conductive heat from below, rather than relying on convective and radiant heat alone. This promotes full and even rising of dough, and crusts that are crispy, chewy and attractive. Most of the baking stones on the market cost less than the FibraMent and are scarcely worth that price because they don't bake as well and they're extremely prone to cracking. In fact, the most common experience with baking stones is that they simply break. FibraMent is a commercial grade product, used in professional ovens across the U.S. (including extremely hot pizza ovens), and carries a 10 year manufacturer's warranty. FibraMent stones are made using a trade-secret reinforced composition, and at 3/4", they're thicker than other stones. They're also formulated for ideal heat transfer properties for baking. Preheating the stone before putting your dough or other food into the oven stores heat in the baking stone which is released to your food in the ideal manner for perfect baking results.

When making bread, most FibraMent users bake directly on the stone. FibraMent is made of materials fully approved by the National Sanitation Foundation (NSF) for food contact. If you want to, you can use a foil or parchment paper liner, or a baking pan. Most users leave the FibraMent stone in their oven full-time. FibraMent works in gas, electric or convection ovens.

FibraMent oven stones are available in rectangular or round shapes, in a range of sizes to fit any oven. The baking stone should be placed on the bottom rack of your oven, and the size should be selected that will allow at least about 1" of space on each side for heat circulation. If you wish, you can take your FibraMent baking stone to your local tile shop and they can easily cut it to a custom size with a common dry diamond blade. Rectangular stones work well for round foods such as pizza, and can be more versatile for other uses.

  • Makes a huge difference for all oven use

    I primarily bought the Fibrament baking stone, because I regularly bake artisan breads and pizzas. More importantly though, I was looking for a stone that I could leave in the oven at all times. There just aren't very many alternative products that are suitable for this use.

    In particular, I wasn't able to even find any other product that was a) rectangular, and b) filled my oven cavity perfectly only leaving a few inches gap on all sides to allow for air circulation.

    After having made the purchase and having used the baking stone for a couple of years now, I have to say I am even happier with it, than I originally expected. It distributes heat extremely evenly. My already-good oven became a perfect oven with the addition of this stone. Absolutely zero hot spots nor any unwanted temperature fluctuations. I just leave the stone on one of the lower racks, and pretty much forget about it even being there.

    Also, it helps with keeping the oven clean(er). Any spills or drips fall on the stone instead of the oven bottom. I use a bench knife to clean the stone occasionally, but I don't mind the stone having a "history" to it. Stains just add to the character.

    I've been using this baking stone for about a year, taking it in and out of the oven, and using it once or twice a week. No problems. Durable. Heavy and thick. Covers 95% of my standard size oven rack. I make sourdough hearth baked breads, and they come out great. I'd recommend it to anyone who wants to replicate a stone oven in their kitchen.

    This is my second stone. I have had the other for years now. Both stay in the oven all the time. I've had no issues with the older one.

    They both perform as they should and help increase the efficiency of the stove. For bread baking it's a must.

    Just started using my 15x20 baking stone for bread, instead of my thin pizza stone. First loaves turned out great. Was concerned over a hole (divot) on the smooth side, but hasn't caused a problem.

    My review here is about the customer service at Pleasant Hill being excellent. I like these people a lot. I was just going over their flyer, and I am looking for something that I can use in my home bakery because I would like to do business with this company. They sent me a shipping label to return the Fibrament. I regret that it doesn't fit in my oven, so I cannot review the item. I can say that the service I received was top notch.

    Approximately six to eight hours after seasoning the stone I opened my oven to see if it had completely cooled down to room temperature. It was still rather warm and I was somewhat surprised. Actually, I was quite impressed.

    So far I've baked on it only once, but the improvement to the bread was obvious. Should have purchased this earlier.
