The einkorn flour called for throughout this book is either all-purpose flour, sifted whole grain flour, or 100% whole grain flour. Substituting whole grain flour for the AP flour works for us, but to make up for the extra absorption of whole grain flour over AP flour, we add 5% more liquid than the recipe calls for.

Decided to make bread from scratch in case stores close or driving isn't an option. Bought Einkorn wheat buck, NutriMill grinder, and this cookbook. The berries make a great breakfast. The cooked grain is nutritional, healthy, non-GMO, and very easy to digest. The tremendous energy from this breakfast is noticeable. You mix into left overs soups and salads. I'm a diabetic trainer for a private healthcare company and a consultant pharmacist. The no-knead bread is tasty and has many uses. The muffins are great and are quickly eaten.
Yes, men can cook and bake. With this book, Einkorn wheat makes meal time welcome in any home or situation. The grinder works from a Honda generator on a Jeep and the bread can be cooked in a dutch oven over hot coals or a propane fire pit (usually in 35 to 40 minutes--the dough must sit in warm place for 2 hours to allow yeast to activate).
If you’re new to bread baking and want to learn more about this ancient grain, this is a must-have resource. The recipes look simple and it's a very easy read. I have made several of the recipes and they all turned out great!

I am so pleased that I purchased this cookbook on Einkorn grain. Besides the digestibility and great flavor of Einkorn, it can be a little tricky to work with. The Einkorn Cookbook takes the guess work out of the equation with delicious recipes!
