Needed for soft doughs

I tried to mix a dough for Pumpernickel which is made from coarsely ground whole-grain rye (German: Schrot) with the spiral. This didn't work very well since the soft and wet dough did not hold together (100% stone ground rye does not form a gluten network). The dough got pressed up against the wall of the bowl and formed an about 0.5 inch paste sticking against the bowl's wall, consequently the dough was only mixed in the center. I had to push the dough down with a silicon spatula which got old since the dough requires 30 - 40 minutes of mixing. Changing to the stirring paddle completely solved the issue and I learned the limits of a spiral mixer. I'm glad the Alpha G2 offers the option to switch between spiral and paddle.

This paddle certainly looks sturdy, however I have not had the occasion to use it, yet. Given the high quality of other Haussler attachments, I am sure it will perform well.

Do wish the instructions came in English, although I can fire up my German to understand them...
