Zojirushi BB-PDC20BA Home Bakery Virtuoso Plus Bread Machine

The Zojirushi Home Bakery Virtuoso Plus makes a light 100% whole wheat loaf or a delightful white bread from start to finish, in a traditionally shaped, 2 pound, horizontal loaf! And that's just the start of it. The Zojirushi does an outstanding job of developing gluten and you can use the dough cycle by itself if you want, then finish baking in your regular oven... make dough for crisp pizza crust, light dinner rolls, mouth-watering cinnamon rolls, hamburger or hoagie buns, artisan breads, sourdough, cakes—the possibilities are endless. Don't want quite 2 lbs? The Zo gives you the freedom to make smaller 1.5 lb. loaves if you'd rather. Even makes fruit jam and meat loaf.

The Zojirushi bread maker has beefed-up pulleys and belt—the heaviest-duty drive system ever on a Zojirushi bread machine, for a long, trouble-free life. Unlike most bread machines, the Zo has plenty of power and durability for whole grain dough. Of course, it's equally at home with white flour, or any blend you can imagine. Twin paddles provide superior kneading action so you get well-raised breads with great texture and the lid is highly domed to keep your bread from sticking to the lid if your recipe rises a little high, and has crust-control adjustability. Pan inside dimensions are 5"W x 8.75L x 4.75"D. Pan lining is BPA-free.

Even though it's stronger than ever, this is also Zojirushi's quietest breadmaker ever.

Zojirushi has added a 10 minute "power interruption memory" into their bread machines, so your bread won't be ruined if your power blinks off.

Just pour ingredients into the Zojirushi Home Bakery breadmaker (unmixed!) and select settings (comes with an easy to follow manual). The Zojirushi takes it from there and alerts you when your bread is ready. A beep will remind you when to add mid-cycle ingredients, if your recipe calls for some. The control panel is set at the perfect angle for easy viewing, and the Zo's new, bigger-than-ever window lets you see what's happening inside.

The Zojirushi Home Bakery Virtuoso Plus bread maker lets you open the lid during operation without resetting the cycle (it keeps running with lid open). A full set of preprogrammed cycles is included for a variety of breads, or you can easily create your own custom cycles. The Zojirushi Home Bakery bread machine now remembers three of your favorite custom recipes for one-touch programming. It can also easily be programmed for delayed start (up to 13 hours ahead) so you wake up in the morning to the wonderful aroma of fresh bread for breakfast. The timer works for all bread cycles except Quick and Sourdough cycles.

Course selections are now printed on the bread maker lid with corresponding numbers to select on the keypad. Various healthy course settings including the following cycle options:

Zo-gee-ru-sheesh!... How do you SAY this anyway? Do what we do and call it the "Zo"! (Officially, it's zo-jih-ROO-shee.)

You'll love it! The Zo lets you have fresh, delicious, healthful bread in the kitchen all the time!

SAF Red Label Instant Yeast, 1 lb.

Saf-Instant® Red is a granular free-flowing yeast for use in doughs with sugar levels of up to 12% (Baker’s Percent). Saf-Instant Red is best for short-time fermentation processes.

Each 1-lb bag of SAF Red Label Yeast is enough to make 40-45 loaves of bread.

Saf-Instant Red is recommended for the following baked goods:

While there are a few varieties of yeast out there, the two most common you’ll find are active dry yeast and instant yeast (which is also known as bread machine yeast, or rapid-rise yeast). The major difference between the two is that instant yeast has much smaller granules, making it easier to dissolve into dough and is faster to activate. This means instant yeast can be added to the recipe with other dry ingredients. Recipes calling for active dry yeast usually call for you to “proof” the yeast in sugar and water before adding it to your dry ingredients.

The million dollar question is, is acive dry yeast and instant yeast interchangeable? Most sources say that you can use active dry and instant yeast interchangeably. However, it’s best to add 25% more active dry yeast if you’re using it in place of instant yeast, and 25% less yeast if you’re substituting instant for active dry yeast.

While there’s not a big difference in flavor, those with a keener palate tend to notice a stronger flavor in instant yeast. If you substitute instant yeast for active dry yeast, and keep the measurement the same, you may want to add a little more salt to help with flavor.

Another important point to keep in mind if substituting one yeast for the other, is that instant yeast is intended for just one rise. If a recipe requires you to let the dough rise, knead, and then rise again, your bread may not rise as well the second time around, using instant yeast. In recipes that call for multiple rises it's best to use active dry yeast.

If you're in a pinch, go ahead and substitute one yeast for the other, just keep in mind the difference in ratio as mentioned above, as well as the lower second rise that comes with using instant yeast.

To test yeast to see how active it is, mix 1 teaspoon sugar into 1/2 cup of warm water (110° to 115° F), then mix in 2-1/4 teaspoons yeast. If mixture has risen to the top of the cup by the end of ten minutes, yeast is very active. If not, it needs to be replaced.
