For Moroccan Jews, that summertime flavor is captured in matbucha (pronounced mat-boo-ha). Its ingredients are beautifully simple—peak-season tomatoes, hot green chiles, and garlic—with patience as the essential seasoning. Simmered slowly, they melt into a rich, deeply concentrated “cooked salad,” a sauce that complements nearly any meal. On the Moroccan Jewish mezze table, matbucha shines as a glistening crimson centerpiece among dips and spreads. It’s also an everyday staple—so beloved that some families affectionately call it “Moroccan ketchup”—and a flavorful foundation for countless dishes.

For New York Shuk’s Culinary Director and Co-Founder Ron Arazi, matbucha was a constant at his Moroccan family table in Israel. His mother’s weekly batches vanished almost instantly. “As soon as the matbucha was ready, she’d fill a few jars—and then we’d gather around the pot with warm challah to scoop up every last bit,” Ron remembers. 

Inspired by those family traditions, New York Shuk’s Signature Matbucha starts with iconic Jersey tomatoes and roasted Hatch chiles, brightened with garlic and preserved lemon to highlight their sun-ripened character. The result is a jammy, vibrant spread with just the right touch of heat. For a gentler twist,  Matbucha with Olives and Mint  adds briny Manzanilla olives, fresh mint, and a hint of turmeric.

Gently simmer eggs in matbucha for a standout shakshuka, or spoon it over pasta—with or without meatballs—for a Moroccan twist on marinara. Swap it in for ketchup to elevate burgers and hot dogs, or simmer fish or chicken directly in matbucha for a rich, satisfying stew with minimal prep. 

Use Matbucha as a braising sauce for vegetables like green beans, potatoes, or eggplant; stir it into lentils, chickpeas, or beans; or spread it generously on sandwiches. For a simple finish, swirl it onto hummus or labneh just before serving. Don't be surprised if you find yourself eating straight from the jar with a sleeve of crackers.
