For New York Shuk’s Culinary Director and Co-Founder Ron Arazi, matbucha was a constant at his Moroccan family table in Israel. His mother’s weekly batches vanished almost instantly. “As soon as the matbucha was ready, she’d fill a few jars—and then we’d gather around the pot with warm challah to scoop up every last bit,” Ron remembers.
Inspired by those family traditions, New York Shuk’s Signature Matbucha starts with iconic Jersey tomatoes and roasted Hatch chiles, brightened with garlic and preserved lemon to highlight their sun-ripened character. The result is a jammy, vibrant spread with just the right touch of heat. For a gentler twist, Matbucha with Olives and Mint adds briny Manzanilla olives, fresh mint, and a hint of turmeric.
