Mrs. Anderson's Brotform Bread-Proofing Baskets are strong and durable for supporting, and adding structure to, bread dough while it rises (proofs). The baskets are crafted from palmwood rattan from Indonesia and come with a removable cotton/linen blend liner. The basket can be dusted with flour and used without the liner for a coiled texture on the bread that adds a beautiful artisan touch!To use, place the cloth liner inside the basket (optional), dust with flour, add kneaded dough, and allow bread to rise. Turn dough onto baking surface, following recipe. After each use, brush out excess flour. Hand wash liner with warm, soapy water. Hand wash basket without soap. Air dry thoroughly before storing.The round basket measures 9.25 x 3.25-inch. The oval basket measures 9.625 x 6.125 x 3.25-inch.

I bought Mrs. Anderson's Proofing Basket even though it seemed expensive because I have bought cheaper ones before and was very disappointed in the workmanship, stability and materials.

This banneton is solid and well made. The lining is linen and fits beautifully. The basket coils are evenly spaced. I use organic rice flour for coating it and my wet sourdough does not stick. And when done proofing you just brush out excess flour...no washing.

Never used one before so I read all the info and reviews, then followed up with the rice flour coating to seal the basket and now I hardly never use the cloth that it comes with. The bread comes out looking like the bakery made it!
