I was used to putting plastic wrap held by rubber bands on my bannetons while proofing my dough. It worked, but took some time. These bags are much more convenient to use. I didn't really know they existed until I was looking at Rofco ovens and found this website. I am very impressed with what Pleasant Hill Grain sells.
