Famag's Grilletta IM-5S mixes and kneads up to 11 lbs. of dough, but also handles batches as small as 1 lb. equally as well. In terms of flour capacity, this is 10.6 lbs. down to 0.6 lb. Capacity of the stainless steel bowl is 8.4 quarts. Unlike inferior designs, the kneading arm of the Famag lifts high for bowl access and removal, and provides lift-assist.

I owned a bakery for several years, and am now retired and bake at home. Until I got the Famag mixer, I almost gave up on finding a mixer that produces good dough development in small home sized doughs—like 1,500 grams or so. The Famag is just great. Gives me good dough strength like I got in my larger spiral mixer at the bakery. I wish it had a built in timer, but other than that absolutely no complaints. I am SO GLAD I bought this mixer.
The mixer IM-5S is very good, solid build, delivered on time, excellent packaging.
Now baking bread 4-5 times a week with confidence.
Pros: heavy. doesn't walk on a countertop, ever-ever.
Cons: heavy. I rent an apartment on the 4th floor and brought the mixer upstairs myself and only inside I noticed the sticker on a box "minimum two person lift". : )
I recently retired from my mobile pizza business and along with it went my spiral mixer. I looked for a smaller one that I could use in my home. Iam so thrilled with the Famag Grilletta. Tomorrow Iam going to make 8 lb of pizza dough and i would never have been able to do so with my KA.
The design is simple and smart. Worth the money.
Spiral mixer? Breaker bar? Capacity? Dough temperature? Friction from the hook and turning bowl? Does it work on small batches? Which speed? Relax. It's all good. A 1.5 kg Pain Au Levain at 78% hydration, or 3 kg bialy dough, or a 1 pound test loaf of egg dough, or pumpernickel, or an 85% hydration tartine, or - you get the idea. This thing is awesome. Yeast breads, sourdoughs, various pre-ferments and flour combinations - this thing gets the dough smoooooooooth. Small batches or larger, lots of water or just a bit, added ingredients like roasted garlic, seeds, nuts, etc. - like a hot knife through butter, without the heat, of course. Highly recommended, but you're gonna want the bigger one as soon as you make a few batches: -)
After preordering my Famag IM-5S back in November, I kept getting emails that it was further delayed due to one reason or the other. This is not PHG's fault by any means and I would like to give a shout out to everyone there who made this order come true finally lol. Barbara was especially helpful and was patient for most of my responses since maybe I was getting lets say a little edgy in mine?! Ha... but in the end, y'all there did a fantastic job in getting my mixer to me and I cannot express my sincere gratitude enough. Thank you and anyone who asks where I purchased the mixer or any other baking equipment, grains, etc I will steer them to PHG. Again, thank you so much.
I have a Kenwood KM080, which motor is much more powerful than KitchenAid Pro600. However, planetary motion is not great for kneading stiff dough. Spiral mixer is a much better choice for lean dough.
Excellent mixer! Purchased to make artisanal Roman style al taglio dough and the mixer does not disappoint!
It arrived on time. It mixes the dough without getting warm. It does a good job of kneading the dough.
