Understanding the Trizor XV Edge: The original Trizor edge, an innovation from Chef's Choice, has long been acknowledged for its superior sharpness and durability. Its uniqueness is the result of the triple bevel design of each of the two edge facets that meet to form the edge. The Trizor design uses multiple diamond abrasives of successively finer grits to shape the facets into a modified gothic arch to create a superior edge. In the original Trizor edge the major edge angles are formed at 20 degrees. The new Trizor XV edge is likewise made by a three step sharpening, honing and stropping process, but the major edge angle is set at 15 degrees for added sharpness and effortless cutting.

I bought this sharpener based on the recommendations of America's Test Kitchen and Ina Garten. Read the instructions. Do the practice exercises before turning on the machine. It takes about 5 minutes and you're good to go. I've brought steak knives back to life that were dull as butter knives. And once correctly sharpened, they stay sharp. I'm thoroughly pleased with this product.

The key is understanding the "burr. " The instructions take about ten minutes or so to "get. " The result are outstanding. I sharpened all my kitchen knives including my Henkle steak knives. Depending on just how dull your knives are it'll take about five minutes to sharpen each knife. It also helps to have a sharpening steel to do the final hone but it isn't necessary. Bottom line, you've got razors to work with in the kitchen.Moderator:
We want to point out that while the initial sharpening can take a few minutes, normally 1-2, on a dull knife (and esp. if the original grind profile was very different from the Edgecraft's profile), subsequent sharpenings typically take most users only seconds. Most of the knives in the PHG kitchen need only about six passes every few weeks, which takes around ten seconds altogether.
