The Brod & Taylor manual knife sharpener makes professional-quality sharpening simple and reliable. It safely sharpens all types of knives, including serrated, specialty, and high-quality Damascus blades. Precision-ground, ultra-hard tungsten carbide sharpening surfaces are mounted on patented spring-action bars to deliver consistent, controlled results every time. The Brod & Taylor VG2 sharpener quickly sharpens even the hardest knives to a razor sharp edge (up to RC63).
The Brod & Taylor VG2 sharpener combines three tools in one, offering three sharpening techniques: coarse sharpening (for very dull or nicked knives only), honing, and polishing. Sharpening removes metal to create a new edge, while honing realigns the blade without removing metal for ongoing edge maintenance. Serrated knives can be sharpened along the full edge by pulling the blade through at an angle. The stable sharpening bars ensure smooth, even results.
The Professional model features a stainless steel base, while the Classic model is constructed from durable PA66 nylon. Both VG2 models accommodate blade angles from 11°—ideal for ultra-sharp fillet knives—to 21°, suited for rugged chopping blades.
Fine angle blades (such as a narrow angle of 12°) are better for slicing and delicate work such as filleting. However, they will dull more quickly. A wider angle (such as 20°) will hold up better to jobs such as rough chopping. With the variable angle capability, these sharpeners work beautifully on standard knives, serrated knives, single-bevel Japanese knives, hunting and pocket knives, and more.
A one-piece cartridge design makes changing sharpening elements quick and effortless. Sharpening bars last 5-10 years with normal use (replacement sharpening bars are available).

I purchased the Brod & Taylor, knife sharpener "Professional Model KS-500 from "Pleasant Hill Grain" and it was here in 3 days. I wanted the stainless model for its weight 2# and because I leave it out on the next to the knife block and it looks so handsome. This sharpener and its technology is the finest sharpener I've ever owned. I use it after every knife use before returning it to the block. I give the sharpener and "Pleasant Hill Grain Co. five stars. Spend the extra for the stainless model KS-500, you will be glad you did. Respectfully, James

Easy to use and quick. Small and stores neatly away when not in use. Great sharpener.
I love this sharpener. Only issue I have with it is trying to use it with one chef's knife I have. The handle of the knife interferes with sharpening. For the rest of my knives it is great.
After having sharpened six knives, I've concluded that this sharpener is good but not great. I really wasn't able to hone and bring an edge up to the extremely sharp state I desired but I was able to sharpen a couple dull blades and bring them back to a passable level of sharpness and cutting quality. The unit is fairly easy to use and does handle mild resharpening of serrated blades.
I've tried several other sharpeners, but none have come close to being as effective as this one. We have sharp knives again!
