Steam trays are the ideal way to introduce steam in your baking process. Much more than just empty vessels, Rofco steam trays contain heavy stainless rods that store a great deal of heat energy for rapid and complete steam release—order one for each space (shelf) where you want to use steam. Use & Care

Place the steam trays in the oven before pre-heating. We recommend placing trays in the middle of the stones to absorb maximum heat. When the oven has reached the desired temperature, move each tray to the side of the stone. Wear kitchen mitts to do this, as the steam trays will be extremely hot! Then place dough in the oven. Pour about 60ml (2 ounces) of water into each steam tray. Using a half-full 120ml bottle will help prevent spillage. Close the door (without slamming) as soon as possible once you've poured the water into the steam trays. Hold the door for a few seconds by the door handle. If not, the door could open due to the pressure of the steam.
