Rofco Oven Steam Tray
Steam trays are the ideal way to introduce steam in your baking process. Much more than just empty vessels, Rofco steam trays contain heavy stainless rods that store a great deal of heat energy for rapid and complete steam release—order one for each space (shelf) where you want to use steam. Steam potential is a function of the mass of the rod-filled trays, and the heavy 10.5 pound weight of each of these trays attests to their heat-capturing and steam-producing ability!

Unfortunately I do not have a deck or stone oven, so I purchased this to be used in my simple home oven. Most of the homemade steam solutions people come up with simply fall flat because they simply don't have enough thermal mass to provide the large amount of energy required to convert water to steam. Of course this doesn't fix the problem that home ovens are well vented and are otherwise not ideal for baking bread, but I liked the results with this vs one cooked in a dutch oven at the same time.
We have a small 3 deck commercial oven with vents (not Rofco) but the steam option was not installed on it by the previous owner. We researched installing steam injectors (that oven actually takes them and even has a place for the bottom) but they were very pricey. This solution will fit any oven with an enclosed baking chamber (non-convection) and vent control, so it's a very affordable solution to steam our decks and we can use it only when needed. They sit on top of the oven when not in use.
We got three, one for each deck and they arrived safely and fast to our US address by the border (Our bakery is near Vancouver, BC). The product seems very sturdy and hand crafted with care, you can see it in the quality of materials and welding points. It's pretty heavy, I think there are at least 3 heavy rods inside that take up heat and that's why it's better than just a tray with water. Since we're using it in a bigger deck than the Rofco we aren't too worried about the real estate it takes up in the oven but they are pretty slim and not in the way.

Update: Three months later, still work great even with added baking volumes. Just make sure you get them real hot. The one issue we are experiencing is that we use an infra-red gun style thermometer to gauge the heat of the stone, but the infra-gun can't get a good read off the trays as they are made of stainless steel and the reflection throws the reader off. It would be nice if the front and back for this.

Having tested one of these trays, I found that it was very effective in opening up loaves beautifully. Ordered 2 more, so i had one for each shelf.
The unit is well built and very heavy for it’s size. But for the size, it does produce a lot of steam.
This was recommended by a master baker/pastry chef along with the Rofco oven. Works great, no complaints and I did not find it necessary to add additional steam with stray bottles, etc.
This steam tray is well-designed and doesn't take much space away in the oven. And it won't rust!
I have an older oven that does not hold on to steam very well. I had been using a cast iron pan and just was not getting enough steam. This has changed the game! I love this product an I am so glad I found it. I would recommend this to anyone who doesn't have a steam injection oven or home bread bakers who just want to elevate their bread making!
These steam boxes work great in my Rackmaster 2020 oven. Bought three one for each shelf.
