Gaskets should be replaced periodically, as they will harden over time and stop working — which will cause seal loss, and your cooker won't work. It's easiest to order a with your cooker, so you'll have a backup. (They can also be nicked or damaged by a stove burner, etc.) Tip: When not in use, gaskets can be removed from cooker lid to maintain proper shape for longest life.

With any pressure cooker, be sure to add sufficient water. Complete evaporation will spoil your food
and damage the cooker. If you want, you can keep food suspended above the water by using a trivet.

While we also have the larger Kuhn Rikon, (double the size of this one,) as well. Welove them both. I'd have to say that this one is the one we usually grab, unless we'll be cooking for a whole lot of people. This unit is perfect for a couple, but will easily accommodate enough food to feed four people as well. If you're thinking of buying a real quality stainless steel pressure cooker, (not one of those commonly sold everywhere cheap junk stamped aluminum ones,) and you're only feeding 2-4 people, this would be my recommendation. If you have more mouths to feed, I'd buy the "big brother" model, (which we also have as well.)
Kuhn Rikon is the best performing and best looking pressure cooker out there--excellent.
