The large hard cheese mold is used for making hard cheese between 4 and 7 pounds, depending on how dry the curds are, and will handle a maximum pressing of 150 - 200 lbs.
These molds don't require as heavy of a weight for pressing as many other molds would, and they have an open bottom. The open bottom provides ideal drainage. Both molds are made of food grade polypropylene.
