Grandma Eloise's bread dough enhancer from Kitchen Kneads contains natural ingredients that help dough rise better. It also improves texture and keeps your bread fresh longer. Grandma Eloise's dough enhancer uses a time-tested formula, popular for many years.
Grandma Eloise's dough enhancer has a shelf life of 10-15 years. Store in a cool, dry place. We don't recommend storing in the freezer or refrigerator because moisture can cause the enhancer to become caked together and/or gritty.
Recommended use rate is one tsp. per cup of flour.

I've been home bread baking since I was a kid (I'm in my 60's) and have never used dough enhancers before - generally too many listed chemicals - no thank you. On my first online shopping trip to Pleasant Hill Grain, I spotted GRANDMA ELOISE'S DOUGH ENHANCER and decided to give it a try. I've gotta say that I'm impressed with the difference in the bread texture.
I mostly use a basic flour, water, salt, and yeast recipe for quick, single rise, no kneading, bread in an iron dutch oven. It makes a great loaf with larger holes. The enhancer seemed to reduce the hole size and soften the texture of the bread. I may still bake without it from time to time to get that good hearty loaf, but for now I intend to keep using it and explore what I've been missing all these years.

I’ve been doing a lot more bread baking in these recent months and decided to give dough improvers a shot. I stumbled upon this one by chance and I’m so glad I ordered it. I used a couple of teaspoons for my recipes and during the proofing stage I could already see the difference. The final result was wonderful soft and pillowy bread. It’s a big container so I’ll have some for quite some time.

This is my not-so-ecret ingredient to great, light, perfectly textured whole wheat bread. Made 11 loaves last week alone, and every loaf turned out perfect. I mix and knead using the Bosch Universal mixer purchased from Pleasant Hill, and include a couple Tablespoons of Grandma Eloise Dough Enhancer to each batch. Each time I open the container I take a quick whiff of that citrus-y goodness... My only additives: Eloise dough enhancer and gluten. Works every time!
Improves the texture and helps the bread stay moist. Also seems to inhibit mold formation without use of preservatives. In a four loaf batch I use 1 tbs of Grandma and 2 tbs of vital wheat gluten.
I have been using the Grandma Eloise Dough Enhancer for years. It makes my wheat bread, made from freshly milled wheat berries, very soft and fluffy. The bread also stays softer for a longer shelf life, than without this product.
This dough enhancer makes wonderful light and fluffy bread!
