The Chef's Choice® 316 Asian Sharpener puts a factory sharp, precision edge on all contemporary Asian style knives, Chinese style cleavers and the thinner, traditional single-bevel style Japanese blades. Incorporating 100% diamond abrasives in both Stage 1 and 2, the Model 316 hones and polishes each side of the knife blade separately at 15 degrees. This feature allows the user flexibility, guaranteeing the sharpest possible edge on all contemporary double-bevel Asian-style blades as well as traditional Japanese single bevel knives. High precision elastomeric angle guides eliminate guesswork. UL and ETL certified. Assembled in the U.S.A.
Cook's Illustrated recommends the Chef's Choice Model 316 sharpener saying the result of using this sharpener is comparable to a blade with a factory-sharpened edge and it will remove nicks in a blade.

I've sharpened 4 knives so far: one chef's, one garden knife & 2 paring knives. The paring knives were a little difficult due to their short blades. Longer blades are easier to guide through the sharpener. All blades were very sharp when I finished with them.
I'm so pleased with Chefs Choice 316 Asian Knife Sharpner. I wasn't sure if I had Asian or European knives but with this sharpener you can realign your European knives to Asian. I took my knives to the butcher to have sharpened and they came back duller than before. I used my knife sharpener and now I can actually cut and chop as usually. So glad I pulled the trigger and bought this brand. America's Test Kitchen recommended!
I love love it. Works so well.
I wanted the Trizor Model 15 but it was out of stock. This was the economy model reviewed on America's Test Kitchen. If you can wait, I would get the better model. This Japanese knief sharpener did an good job with my good German/Japanese knives but was difficult with pairing knives.
