I've sharpened 4 knives so far: one chef's, one garden knife & 2 paring knives. The paring knives were a little difficult due to their short blades. Longer blades are easier to guide through the sharpener. All blades were very sharp when I finished with them.
I'm so pleased with Chefs Choice 316 Asian Knife Sharpner. I wasn't sure if I had Asian or European knives but with this sharpener you can realign your European knives to Asian. I took my knives to the butcher to have sharpened and they came back duller than before. I used my knife sharpener and now I can actually cut and chop as usually. So glad I pulled the trigger and bought this brand. America's Test Kitchen recommended!
I love love it. Works so well.
I wanted the Trizor Model 15 but it was out of stock. This was the economy model reviewed on America's Test Kitchen. If you can wait, I would get the better model. This Japanese knief sharpener did an good job with my good German/Japanese knives but was difficult with pairing knives.
