The baking powder from Rainy Day Foods contains no aluminum, which means it's somewhat faster acting than typical double-acting baking powders. You'll see a boost of leavening in the oven, but most of the reaction occurs in the mixing bowl. While this makes a more delicate crumb structure in the finished product, you'll want to get your food in the oven quickly for the best results.
Cans are airtight sealed and oxygen-free for long term storage. #2.5 cans and #10 cans are coated internally with food-safe anti-corrosion coating. Please note that the terms "#10 can" and "#2.5 can" designates a "Number 10 Can" and "Number 2.5 Can" which are standardized can sizes, and does not refer to a quantity of cans.
