The Zojirushi Home Bakery Virtuoso Plus makes a light 100% whole wheat loaf or a delightful white bread from start to finish, in a traditionally shaped, 2 pound, horizontal loaf! And that's just the start of it. The Zojirushi does an outstanding job of developing gluten and you can use the dough cycle by itself if you want, then finish baking in your regular oven... make dough for crisp pizza crust, light dinner rolls, mouth-watering cinnamon rolls, hamburger or hoagie buns, artisan breads, sourdough, cakes—the possibilities are endless. Don't want quite 2 lbs? The Zo gives you the freedom to make smaller 1.5 lb. loaves if you'd rather. Even makes fruit jam and meat loaf. The Zojirushi bread machine has beefed-up pulleys and belt—the heaviest-duty drive system ever on a Zojirushi breadmaker, for a long, trouble-free life. Even though it's stronger than ever, this is also Zojirushi's quietest breadmaker ever. Unlike most bread machines, the Zo has plenty of power and durability for whole grain dough. Of course, it's equally at home with white flour, or any blend you can imagine. Twin paddles provide superior kneading action so you get well-raised breads with great texture and the lid is highly domed to keep your bread from sticking to the lid if your recipe rises a little high, and has crust-control adjustability. Pan inside dimensions are 5"W x 8.75L x 4.75"D. Pan lining is BPA-free.
Zojirushi has added a 10 minute "power interruption memory" into their bread machines, so your bread won't be ruined if your power blinks off.
Easy to use: Just pour ingredients into the Zojirushi Home Bakery breadmaker (unmixed!) and select settings (comes with an easy to follow manual). The Zojirushi takes it from there and alerts you when your bread is ready. A beep will remind you when to add mid-cycle ingredients, if your recipe calls for some. The control panel is set at the perfect angle for easy viewing, and the Zo's new, bigger-than-ever window lets you see what's happening inside
The Zojirushi Home Bakery Virtuoso Plus bread machine lets you open the lid during operation without resetting the cycle (it keeps running with lid open). A full set of preprogrammed cycles is included for a variety of breads, or you can easily create your own custom cycles. The Zojirushi Home Bakery breadmaker now remembers three of your favorite custom recipes for one-touch programming. It can also easily be programmed for delayed start (up to 13 hours ahead) so you wake up in the morning to the wonderful aroma of fresh bread for breakfast. The timer works for all bread cycles except Quick and Sourdough cycles.
Course selections are now printed on the breadmaker lid with corresponding numbers to select on the keypad. Various healthy course settings including the following cycle options:
Multigrain: specifically designed to thoroughly bake heartier breads full of dense grains and seeds.
Gluten Free: created with a special flow and adjusted rise times to help the dough bake properly in the absence of gluten.
European: built to have a 'rustic' European finished product, with a chewy substantial crust.
Sugar or Salt Free: these settings allow you to make delicious bread even without sugar or salt.
Vegan: designed for baking bread without animal derived ingredients; such as olive oil instead of butter or almond milk instead of milk.
SHAPE Feature (Homemade course): allows users to remove the dough after the kneading cycle, shape the dough as desired, press resume or the Home Bakery will automatically resume in an hour. The perfect feature for making cinnamon rolls!

I have had this machine 10 days and have baked 4 loaves of bread [2 white, 2 honey wheat] and 3 came out perfect. One was a recipe from another brand machine which could have been a failure if I hadn't used proportions of a similar recipe in the Zojirushi recipe book. Exact measurements are really important to bread machine success. This machine is so easy to use. It is top quality construction, runs quietly, has a large viewing window, and a heat element in the lid that gives the bread an overall consistent color. The bread pan is heavy non stick material that cleans so very easily with warm H2O, a sponge, and dish soap. The 2 paddles knead much more efficiently and leave a very small indentation in the loaf. So different from the one paddle machines I've had. The bread texture is light and smooth and the flavor is exceptional! I can't wait to try more of the recipes in the book and on the website. We Love this machine!
UPDATE: Three months have passed now and we still love this machine. We are baking 2-3 days/week. experimenting with new recipes and all are successful. What more can I say?
I bought this to replace a 20 year old Zo. I am working with home milled 100% whole wheat and have never been able to get a fully formed loaf from my previous Zo. So decided to see what the latest top of the line might do for me. First off, I was thrilled to find what I hoped I might in the latest Zo recipe book - measurements by grams! Yes!
I decided to acquaint myself with the machine by doing a white bread recipe. Perfection. Then I baked a 100% whole wheat loaf using some seven year old Einkorn rather than the more expensive Anson Mills Red Fife. Again, a perfect loaf. Emboldened, I went for it with the A. M. Red Fife, a flour I have yet to produce an acceptable loaf with by hand. Again, a perfect loaf in every regard. I am astonished. The thing is built like a tank and so easy to use. Worth every penny!
Once I received the Zojirushi BB-PDC20BA Home Bakery Virtuoso Plus I tried the 100% whole wheat recipe that is in the included recipe booklet. I set it on the timer to be ready at 5am. When I got up the bread was done, I must say it is an excellent loaf of bread. I am used to making my own bread from scratch, I have a wheat grinder and normally make 5 loaves at a time. This machine is much more convenient and easy. Now I just make a fresh loaf when I need it. No need to freeze 4 or 5 loaves of bread.
The machine is everything you can ask for except an automatic dispenser to add things. This could be a problem since the machine will not stop the cycle for long after the beeper indicates the proper time to add them. If you miss the beep your extras don't go into the mix. Other than that the machine is exceptional.
I am delighted with the purchase of the Zojirushi bread machine. It so easy to make gluten free breads and other difficult products. My grandson requires a gluten-free diet. He loves the bread made of special flours baked in the Zo. It is a pleasant change from commercial GF free products that appear unappetizing, unlike regular loaves, and are tasteless. Other various breads I’ve baked from the Zo are outstanding in crumb, rise, taste and appearance with incredible simple and easy operation, saving much time as well. Thank you for carrying the Zojirushi that improves my grandson’s life.

We make bread every few days in our family and we bought this item after our last one failed after some 20 years. I have used it now for several weeks. This is an outstanding machine. So glad we decided to go the extra money. The holes left by the paddles are not an issue for us as in the past. Because of the heater in the top, the sides and bottom of the bread don't have to be cooked hard to get the top done. I have friends that owned a bakery for years and they are very impressed at the quality. I normally have a note on what can be improved, but so far, it has exceeded my expectations in all areas.
Love the bread maker. Having a great time learning. Had a small problem removing the blades to clean. Found the solution in the book. Hold the pin on the bottom of the pan that holds the paddle and pull the paddle blade off. Very simple. Have made a loaf of white bread and dough for cinnamon buns which I adapted from the recipe of my old bread maker recipe book. Tomorrow I make sour dough bread. Thank you Pleasant Hill Grain for a speedy delivery and the fair price you charged. It is greatly appreciated. Now if I can find yeast I’m good to go.

I have been using bread machines for many years, so, when my last one died, I decided to go with the top of the line. To date, I have made bread, pound cake, and banana nut bread. All have come out just great. The one item that I truly do NOT like about this machine is that the beep is so faint that it might as well be nonexistent. I can't even hear it well when I am in the kitchen with the machine.
I had several bread machines and they so-so worked! NEVER the same. I wanted another one and after checking out many we found this one and absolutely love it. WE have baked many loaves and everyone turns out great. I have read the comments and I have no problem adding other ingredients. I put the raisins in right away and it works out perfect. The beep at the end could be a little louder other wise it is a PERFECT Bread machine. LOVE IT> THANKS Pleasant HILL!!!! Garry and Ellen
