Using a lame (pronounced "LAHM") to score bread allows the steam to escape, creating a crisp and golden crust. A lame also ensures a more even baking and prevents the bread from rising too much in one area. The Mure & Peyrot Boulange Bread Dough Scoring Lame comes with a 436.1 blade. The blade is sharp on all four corners which allows you to use a single blade in four positions before needing to replace it. The blade also has a secure locking mechanism to prevent accidental discharge of the blade when scoring. A removable protection cover for the blade is included to aide in safe storage. 

The Mure & Peyrot Adour Bread Dough Scoring Lame features a curved blade and is lightweight for easy use. Using a bread lame helps to encourage better rising while proofing. This blade also has a secure locking mechanism that helps ensure the blade stays in place when scoring bread dough. 

The Boulange Lame's blade position is less curved than the Adour. Both lames work well scoring baguettes, boules and artisan breads.
