How a chamber vacuum sealer works
Chamber food sealers work by vacuuming virtually every molecule of air from the chamber, then automatically sealing the mouth of the plastic pouch in a heat sealing strip. The bags (also called vacuum pouches) are made of double-layered film. An inner polyethylene layer allows the edges of the bags to be heat sealed together, and their outer nylon layer provides an impenetrable barrier to air and moisture. Quality bags, properly sealed, can protect their contents for years.
Vacuum sealing extends foods’ shelf life up to five times its normal refrigerated storage life. This preserves quality, reduces spoilage, and lets you buy food in larger quantities for convenience and lower pricing. Removing the air also completely eliminates freezer burn, which is caused by dehydration.
Greater economy of commercial chamber vac sealers
Chamber vacuum sealers cost more initially than consumer-grade, or “home” food sealers. They’re built heavier for a far longer service life, and they’re designed to run continuously in heavy duty use with no cool-down time required; this is referred to as a 100% duty cycle. But it may come as a surprise that if you use one much, their net operating cost is actually much lower than that of consumer food sealers. Besides machine durability, a major reason for their economy is that the pouches they use cost much less. Consumer machines require more expensive embossed plastic, while commercial chamber machines use lower-priced smooth plastic.
Based on using medium size bags, total costs to operate a commercial sealer will reach breakeven vs. a consumer-duty sealer after sealing just 1000 to 1500 bags. At that point the chamber sealer has paid for itself in plastic savings, then it starts saving you money through continued use of the very economical commercial vacuum sealer bags. Add to this the commercial vacuum's convenient high speed operation and long lifespan and it's clear that the advantages of a chamber vac for your business are attractive even for serious home users.

Options to choose from
The basic functions of all chamber sealers are the same, but several configuration and equipment options are available. While all models have at least one seal bar, dual seal bars are available to increase the number of smaller bags that can be sealed per cycle.
Another option, gas flush capability, lets you do normal vacuum sealing where the vacuum bag is sucked down tightly around the material being sealed, or you can first remove the air, then replace it with an inert gas such as nitrogen before the pouch is sealed. This gives you a package that’s free of air and oxygen (as well as water, if the material being sealed is dry), yet the bag doesn’t squeeze down around its contents. Chamber vacuum machines can be used for a wide variety of non-food items, and gas flush is a good option for sealing delicate products.
