The Zojirushi Home Bakery Virtuoso™ is Zojirushi's flagship bread maker! It makes a light 100% whole wheat loaf or a delightful white bread from start to finish, in a traditionally shaped, 2 pound, horizontal loaf. The Zojirushi BB-PAC20 does an outstanding job of developing gluten and you can use the dough cycle by itself if you want, then finish baking in your regular oven—make dough for crisp pizza crust, light dinner rolls, mouth-watering cinnamon rolls, hamburger or hoagie buns, artisan breads, sourdough, cakes—the possibilities are endless. The Zojirushi BB-PAC20 Virtuoso™ features an additional heating element in the lid for perfectly browned crust every time.

The Zojirushi bread machine has beefed-up pulleys and belt—the heaviest-duty drive system ever on a Zojirushi breadmaker, for a long, trouble-free life. Unlike most bread machines, the Zo has plenty of power and durability for whole grain dough. Of course, it's equally at home with white flour, or any blend you can imagine. Twin paddles provide superior kneading action so you get well-raised breads with great texture. Its high domed interior keeps your bread from sticking to the lid if your recipe rises a little high, and it also offers crust-control adjustability. Pan inside dimensions are 5"W x 8.75"L x 4.75"D. Pan lining is BPA free.

Zojirushi has added a 10 minute "power interruption memory" into their bread machines, so your bread won't be ruined if your power blinks off.

Just pour ingredients into the Zojirushi automatic bread machine (unmixed!) and select settings (comes with an easy to follow manual). The Zojirushi BB-PAC20 takes it from there and alerts you when your bread is ready. A beep will remind you when to add mid-cycle ingredients, if your recipe calls for some.The control panel is set at the perfect angle for easy viewing, and the Zo's new, bigger-than-ever window lets you see what's happening inside. This new model lets you open the lid during operation without resetting the cycle.     I've been making bread for about twelve years and have tried many methods. I have done the "no knead" method, and I own the mixer considered the gold standard of bread mixers, and now the Zojirushi. Right out of the box it produced a good loaf, and after experimenting with using home ground flour, I think it is actually superior. Having features like a custom cycle allows me to design a cycle to let the dough mature. It's exceptionally well made, and doesn't dance across the counter. The Zojirushi breadmaker is clearly a winner and the "Best in Class".

    We've owned a number of these machines and this one is by far the best. You almost can't mess up as long as you have good ingredients, common sense, and electricity. That last one is important by the way. Who knew the Japanese were so awesome with bread?

    I've had a few different bread machines over the years, and I've finally bought my last one. This Zo is awesome! Built to last, easy to use, comes with great tasting and easy to follow recipes, and the only machine I'm aware of that produces an actual loaf of bread! No more round odd shaped homemade bread! I highly recommend and well worth the money! I also made some of excellent jam with an easy recipe included. So many options with this machine.

    For the last several months my husband has been wishing for weekly homemade bread. As we have several young children, this is not very feasible. On a whim I decided to look up bread makers. Most people I know if you have breadmakers use them for a short time and then get rid of them. I decided to look for a high-quality one. The reviews that I read and the YouTube videos that were posted raved about the Zojirushi breadmaker. I decided to give a try after researching it. I am very please with the results. We make loaves almost daily. The timer is convenient. Also, the consistency of the loaves is wonderful. With fresh milled flour, it takes me about 10 minutes to put in the ingredients and then wash the loaf pan when it's finished. I really like the window and the heated lid. I think that makes a huge difference. It's also like a little oven in that the loaf pan sits in the heating area and it's not connected directly to it.

    I am quite pleased with the machine. My old Zo is now being retired only because the pan wore out. It's nice looking, powerful, quiet, doesn't jump around as it kneads. The heated lid does brown top nicely, slicing was easier, no scrunching down. Bread comes out as expected. I shouldn't have waited so long to get it.

    The Zojirushi PAC20 is our third and, without question, hands-down the best bread machine we've ever had. It's amazingly powerful, but still quieter than our two older machines (not Zo's). I would highly recommend this machine to anyone who is serious about making bread on a regular basis, or any frequency for that matter. It does everything perfectly and the loaves are beautiful. I would also add that Pleasant Hill Grain is awesome to deal with. Our bread machine came quickly and we couldn't be happier with the products and service we've received from them.

    I bought a replacement zoji breaad machine when my old one died, with the intention of continuing to make whole grain sourdough breads (real sourdough--no yeast). This new machine has the ability to program a first rise as long as 12 hours in the homemade course. Sounded great since I had been unplugging the old machine after the knead and letting it sit at room temp. overnight before a short rise and long bake the next day. Worked well but required reprogramming the machine. With the new machine I programmed the knead, used the shape cycle to remove the paddles, then gave it a conservative 5 hour rise while I was available to watch it. It rose really fast and I measured the surface temp of the dough at 90F. Pretty high! I cut an hour off the rise time and the loaf was OK but not as sour flavored as I like.
    I couldn't find anything about rise and bake temps in the directions they sent with the machine. I wrote to the Zoji customer service people, asking for the 3 rise and the bake temperatures. I got an idiotic answer telling me that "rise temperatures and bake temperatures are not provided to end-users as it is considered proprietary information. "
    I'm outraged! Can you imagine the manufacturer of your kitchen oven telling you that its temperatures were proprietary information? I am a very offended "end-user".
    After 3 months use: Zoji seems not useful for real sourdough--their "sourdough" recipe calls for vinegar & yeast. I'm using it to knead & bake only.
