Spiralmac spiral dough mixers are built in Italy by a family-run company that’s made quality food preparation equipment since 1964. The Spiralmac Royal Queen 5 mixer is a dough expert, designed expressly to mix and knead doughs, from low to high hydration, quickly yet gently. The key feature that makes this possible is the spiral dough hook, working in combination with the dough breaker bar.
The Spiralmac’s bowl itself rotates, bringing the dough to the spinning spiral dough hook with each revolution. This action is exceptionally thorough and uniform. An integrated offset breaker bar ensures ideal metering of the dough into the spiral hook. This three-way kneading process is exceptionally thorough and fast, yet the low impact and widely distributed dough contact of the spiral hook completely avoids overworking and overheating of the dough. Wide-range, infinitely variable speed adjustment lets you dial in precisely the action you want. The spiral dough hook on the Spiralmac Royal Queen 5 operates at 110-310 RPM.
PROFESSIONAL DESIGN & QUALITY
Spiralmac mixers feature heavy duty chain overhead drive for the dough hook. The lower (bowl) drive is driven by a sealed, speed reduction gearbox and heavy duty chain. Sealed industrial ball bearings are used for exceptionally long life. Construction is robust throughout, with a weight of 59 lbs. Epoxy powder coating over a steel cabinet protects the handsome appearance of your Spiralmac mixer.

FIXED HEAD & REMOVABLE BOWL
The Spiralmac mixer features a clever design that provides a removable bowl while avoiding the complexity involved with a tilting head. Both the breaker bar and the dough hook are removable, coming off in just twenty seconds, without tools, simply by loosening two large knurled knobs. This simple and ingenious design features fewer moving parts in the drive train for low maintenance and quiet, trouble-free operation. It also allows you to take the dough hook and breaker bar to the sink for quick, easy cleanup. HYDRATION OR HEAVY DOUGHS
Thanks to the spiral hook’s action, mixtures that overtax other designs—such as pizza or bagel dough—are handled easily, quickly and efficiently in the Spiralmac Royal Queen 5. Doughs of all kinds, from heavy to high-hydration artisan doughs, come out smooth, silky and perfectly developed. With its wide speed range, the Royal Queen 5 handles the full range of dough densities. SUPER CAPACITY RANGE
The Royal Queen 5 mixes and kneads up to 11 lbs. (5kg) of dough at 60% hydration (or more at higher hydration), but also handles batches as small as 1.3 lbs (600 g) at 60% hydration equally as well. In terms of flour capacity, this is 6.6 lbs (3 kg) down to 0.8 lb (400 g). Capacity of the stainless steel bowl is 7.4 quarts (7L). To mix and knead dough below 60% hydration, like challah or bagel dough, Spiralmac recommends filling the bowl to only half capacity.

SPEED BASED ON HYDRATION
The Spiralmac is a variable speed mixer that has a speed dial marked from 0-10. The table below shows the maximum speed Spiralmac recommends for mixing dough at different hydration levels. These are general guidelines, as dough characteristics vary. If mixing dough that's less than 60% hydration, Spiralmac recommends only filling the bowl to 50% capacity, and mixing for only 10 minutes at a time; judgment must be exercised in any case, to avoid kneading dough so dry it’s outside of normal baking parameters, regardless of the hydration numbers. With dough over 60% hydration, dough can be mixed for up to 20-25 minutes before the mixer should be turned off for about 40 minutes.

Permanently Lubricated Reduction Gearbox
The Spiralmac mixer is equipped with a permanently-lubricated gearbox with tempered steel helical screw. FORWARD AND REVERSE MIXING
There are two buttons on the Spiralmac mixer for controlling the direction of both the dough hook and bowl. The down arrow button moves the spiral hook in a downward motion, and the up arrow button moves the hook in an upward motion. The down arrow button can be referred to as the “forward” direction while the up arrow button can be referred to as the “reverse” direction.
Some users incorporate ingredients with the spiral hook turning in an upward motion, to reduce the amount of oxygen incorporated into the ingredients, and then switch to a downward motion to knead the dough. Others users prefer to mix with the hook turning in a downward motion from start to finish.

I think the geometry is a little off. The dough tends to climb the hook and the pumpkin shape is very flat. I think maybe they need to redesign the hook.
This is my third spiral machine. I bought it because of the removable parts which work well.
Darren spent a lot of time helping me decide which spiral mixer to buy. I purchase the SV5 and am delighted. There was a delay in shipping because the dough hook and bar had to be refitted with new hardware and I received a call from customer service to let me know what was going on.
Received the mixer in great shape and it works so well.
While I primary use for pizza dough—which it’s awesome for—I may have to increase my bread making. This mixer is very heavy duty, love the easy clean up. It was between this and another mixer and based on my research and the way the mixer comes apart I decided to go with this one and I’m not disappointed. Shipping was super-fast, I was amazed.
Approximately two weeks ago we purchased the Spiralmac Royal Queen 5 Spiral Dough Mixer from Pleasant Hill Grain (PHG) and our experience could not have been better. During the initial research, we considered a few different models at PHG and other sellers, but came back to PHG mainly due to all of the excellent customer service reputation, offering of quality products, pre-sale product information and availability. There were ample product detail and guidance to help us compare models.
We ultimately settled on the Spiralmac for its full set of features and perceived build quality. We've been preparing more and more pizza dough to make pizza Napoletana in our wood fired oven for our large gatherings of family and friends. We've been mixing and kneading the dough by hand, but it is increasingly difficult to keep up and also to achieve the dough structure and consistency required for pizza Napoletana. Based on the PHG product page, we felt the Spiralmac had what we needed in terms of capacity, power, variable speed control, sufficient top speed for 70% hydration dough, rotating bowl and even forward/reverse mixing (reverse is helpful when making biga/preferment to avoid forming gluten at that stage).
We ordered the mixer on a Saturday and we received it by Thursday (just 11 days ago)! It was double-boxed, well-protected and arrived in perfect condition via FedEx.
When we unboxed the mixer, we were pleasantly surprised, indeed impressed, with the build quality of the Spiralmac, its design, styling and robustness. We've already made two batches of pizza dough with ease! It makes quick and beautiful work of the task! Even clean-up is a breeze - the food grade stainless steel spiral dough hook and the breaker bar are effortlessly removed in seconds. The heavy duty stainless steel bowl is easily removed for washing.
The operation of the mixer is quiet and smooth and it can handle a large batch of dough without struggling. The Spiralmac is built like a tank. Through PHG and the manufacturer, there is excellent support and even availability of replacement parts - we expect the Spiralmac to last a lifetime. We could not be more pleased with our purchase from PHG. Thank you PHG for your great service and delivery, and thanks to Spiralmac for a wonderful spiral dough mixer - a beautiful, solid machine!
After unboxing the Spiralmac SV5 it was packaged very good with no issues from shipping. The quality of this mixer is visible as you take it out of its shipping carton. Took some help from the Pleasant Hill Staff to instruct me on the right way to take off the dough hook and breaker bar. Its easy to do and very nice that you can remove the bowl for cleaning. I made my first Biga dough recipe yesterday and I was extremely happy how the mixer performed and how nice the dough came out. This machine is a game changer in making my dough recipes.

Purchased to make pizza dough. Made batch of dough for six 12" pizzas and did a great job. Works great, built like a tank. I especially appreciate the disassembly of the breaker bar, spiral head and bowl for cleaning. Every video I watched online showing how to clean a spiral mixer that did not disassemble left bits of wet dough everywhere (not appealing to me). Very easy to place the bar, spiral attachment into the bowl and bring to the sink for hot water and soap (that is a huge benefit).
The Spiralmac is also a fairly compact unit compared to other mixers. Saves space by not having to tilt the drive head away from the bowl. This unit is heavy, so don't plan on moving it around your kitchen when you need it. Set it up so you can always use the mixer where it is located. No problem with delivery. Minor issues to be aware of: 1) my unit tripped the GFCI plug in my kitchen, but works as it should in a non-GFCI outlet (this is apparently a known issue for some motors with a variable speed controller and has been a reported problem on other spiral mixers as well), 2) my wing nut and screw on the spiral attachment was put on so tight, I had to use an allen wrench to back off on the tension (not a big deal, but don't get frustrated if you have a difficult time taking the screws off the first time--I would rather have everything tight for shipping, don't get frustrated).
Overall, very happy with my purchase and would buy again. Glad I purchased this mixer compared to other mixers I was considering and the price was less too!
I've made brioche and sourdough bread and was really pleased with this mixer. It's very, very quiet, and it looks beautiful on my counter.
I love the Spiralmac! I used it to make sourdough Hokkaido milk bread, and then I decided to try it with a very small batch of pasta madre for Panettone. I'm impressed with how quiet it is, how well it mixes dough, even down to as little as a 250g batch. I look forward to using it for a long time. I am also impressed with the PHG employees. They helped me make the decision to purchase this machine and have reached out to me a few times to see how it was going.
