Whole Wheat Gingerbread

This recipe can be baked into a 4.5" x 10" bread loaf pan or 7" x 12" cake pan, depending on how you'd like to serve the gingerbread.

Ingredients:

  • 1/2 c. oil
  • 1 c. honey or 2/3 c. agave
  • 1 egg, slightly beaten
  • 1/2 c. molasses
  • 2 c. finely ground whole wheat flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1 c. hot water

Directions:

  1. 1. Preheat oven to 350° F.
  2. 2. Grease either a 7 x 12 inch cake pan or 4.5 x 10 inch loaf pan with nonstick cooking spray.
  3. 3. With a hand mixer, combine the oil, honey, egg and molasses.
  4. 4. In a separate bowl, stir together the dry ingredients.
  5. 5. Mix the dry ingredients into the wet ingredients and then add hot water and mix again to incorporate.
  6. 6. Pour into your loaf or cake pan.
  7. 7. Bake until a toothpick inserted comes out clean. This should take about 30 minutes for a cake and 45 minutes for a loaf.

Author's Notes:

Try adding 3/4 cup dried cranberries or chopped nuts to the batter! Using flour ground at your grain mill's finest grind setting should give you delicious, beautiful bread. To achieve an even softer crumb, try sifting your flour to remove the wheat bran.
