Walnut Basil Rice Casserole

My casserole calls for 4-1/2 cups of sliced nuts. The Bosch slicer shredder is the right tool for the job! And, using the cookie paddles, I can mix everything in the big bowl of the Universal Plus for this tasty vegan Walnut Basil Rice Casserole.

Ingredients:

  • 6 c. cooked basmati brown rice
  • 4.5 c. walnuts, sliced
  • 4 tbsp. ground flax seeds
  • 2 pkg Mori-Nu tofu
  • 1.5 c. fresh basil or 2 tsp. dried basil
  • 1.5 c. water
  • 6 tbsp. liquid aminos
  • 4 tbsp. nutritional yeast
  • 1 tsp. garlic powder
  • 1-2 tsp. lemon juice, optional

Directions:

  1. 1. Preheat oven to 325° F.
  2. 2. If using loaf pans, line with parchment paper.
  3. 3. Combine rice, sliced walnuts, and ground flax seeds in a large bowl.
  4. 4. Blend tofu, basil, water, aminos, nutritional yeast, garlic powder and lemon juice.
  5. 5. Mix blended mixture with rice mixture. Spoon into two parchment-lined loaf pans or a large casserole dish.
  6. 6. Bake for 50-60 minutes.
  7. 7. Allow to cool 10 minutes before turning loaf pan onto a plate for slicing and serving.
