Vegetarian Lasagna from Dehydrated Tomatoes

Ingredients:

  • 1/2-1 cup dried tomatoes
  • 1 c. minced onion
  • 1 lb. fresh spinach
  • 2 tbsp. olive oil
  • 1/2 c. grated parmesan
  • 1 c. basil pesto
  • 2 c. ricotta cheese
  • 24 cooked lasagna noodles
  • 1/2 lb. grated mozzarella
  • Extra olive oil
  • Salt & pepper to taste

Directions:

  1. 1. Preheat oven to 350º F.
  2. 2. Saute onions in olive oil until translucent. Remove from heat. Stir in raw spinach. Add half the Parmesan. Stir in pesto, ricotta, sunflower seeds and seasonings. Mix thoroughly.
  3. 3. Place layer of cooked noodles in bottom of dish. Spread 1/3 of filling on noodles then 1/3 mozzarella. Add dried tomatoes. Repeat, ending with noodles, mozzarella & parmesan.
  4. 4. Drizzle with olive oil.
  5. 5. Bake 40 minutes.
