Standing Prime Rib

Looking for a simple main dish for your next celebration meal? It doesn't get much simpler than this recipe! At Christmas this fabulous meat is perfect for a family celebration.

Ingredients:

  • 5-6 lb. Prime Rib Beef Roast

Directions:

  1. 1. Let stand at room temperature for one hour.
  2. 2. Preheat oven to 375° F.
  3. 3. Place meat, fat side up, in shallow roasting pan.
  4. 4. Do not cover or add any liquid.
  5. 5. Roast one hour. (Figure roasting time 18-20 minutes to the pound for medium-rare.)
  6. 6. Turn off oven heat. Do not open oven door at any time until ready to serve.
  7. 7. 30-40 minutes before serving, turn oven on again, reset temperature to 375° F.
  8. 8. Roast 40 minutes. (Thermometer reading should be between 140° F for rare and 170° F for well done.)
  9. 9. Remove from oven and let rest 5-10 minutes before slicing.
