Sourdough Waffles/Pancakes

Healthier and delicious sourdough pancake or waffle batter.

Ingredients:

Sponge

  • 1 cup sourdough starter (unfed)
  • 2 cups buttermilk (or combination of yogurt/buttermilk/milk)
  • 1/2 cup unsalted butter, melted and cooled
  • 2 cup whole grain flour (I like 50% spelt & 50% Kamut)
  • 1 tablespoon organic agave

To finish batter:

  • 2 large eggs, whisked and at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon unrefined sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon, optional

Directions:

Sponge:

  1. 1. Mix ingredients until combined.
  2. 2. Add a little extra flour or water to achieve a thick but pourable batter consistency.
  3. 3. Cover and let sit 8-12 hours.

8-12 Hours later:

  1. 1. Add all ingredients to sponge, stir until incorporated.
  2. 2. Cook in skillet, griddle, or waffle iron as preferred.

Author's Notes:

This recipe can be made immediately by mixing all ingredients together, letting the batter sit 30 minutes, then cooking, but the flavor and texture will be better if the batter is left to sit 8-12 hours.
