Ground Beef Potluck

Just a good 'ole feel good Autumn and Winter supper entree that comes together quick and easy after a busy day.
Serves
6

Ingredients:

  • 1/2 lb. Ground Beef
  • 2 Tbsp. Olive Oil
  • 3/4 c. Onion, chopped
  • 1 c. Celery, diced
  • 1-1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 3/4 c. Sliced Black Olives, drained
  • 1 (19 oz) can Diced Tomatoes
  • 2 c. Macaroni
  • 2 (7.05 oz.) cans Bega Cheese, diced

Directions:

  1. 1. In the Zojirushi Gourmet d'Expert electric skillet brown the ground beef, onions, and celery in the olive oil until vegetables are lightly sauteed, about 5 minutes.
  2. 2. Add the remaining ingredients, except the macaroni and Bega cheese.
  3. 3. Bring mixture to a boil.
  4. 4. Add macaroni and cheese dices.
  5. 5. Stir.
  6. 6. Cover & cook slowly for 25 minutes, or until macaroni is tender.

Author's Notes:

Add in ideas include green beans, red or green pepper dices. After sauteing the vegetables 1 (13 oz.) can of ground beef could be added in substitution for the fresh ground beef.

It’s such a complete “brain save” for me. I literally do nothing. The texture ends up being a tad different, but not enough that my family has ever noticed.
