Frito Corn Salad

Corn salad with a crunch!

Ingredients:

  • 2 cans of corn, drained
  • 1 c. mayonnaise
  • 1 small onion, chopped
  • 2 c. sharp cheddar cheese
  • Chili cheese Fritos, crunched

Directions:

  1. 1. Mix together the corn, mayo, onion, and cheese.
  2. 2. Allow this mixture to chill in the fridge for 30-60 minutes before serving to allow the flavors to blend.
  3. 3. Stir in the chili cheese Fritos just before serving.

Author's Notes:

This is a favorite at PHG potlucks! Make sure to wait to add the Fritos until just before serving so they won't get soggy. Another option is to serve the Fritos in a bowl beside the salad, and let each person add their own, this way any leftovers won't have soggy chips.
