This colorful and delicious sauce is a perfect addition to a summer dessert. It's very simple to make using the Victorio tomato and food strainer.

Ingredients:

  • 2 c. fresh berries
  • 1/2 c. sugar
  • 2 tbsp. lemon juice

Directions:

  1. 1. Put the berries in a pan with the sugar and heat gently, stirring with a wooden spoon from time to time. When the mixture comes to a simmer, cook gently for another 10 minutes.
  2. 2. Transfer to a food strainer and strain into a bowl. Let the coulis cool, then stir in the lemon juice.
  3. 3. Serve over any dessert, pancakes for breakfast or ice cream.

Author's Notes:

To serve pancakes with an extra delicious topping: Whip heavy cream to a ribbon consistency, then gently mix in cold berry coulis to create a swirl effect and add a dollop to the top of your pancakes. Enjoy!!!
