Ingredients:

  • 1 envelope (0.25 oz.) unflavored gelatin
  • 3 Tbsp. water
  • 3 Tbsp. instant coffee
  • 4 Tbsp. sugar
  • 1-1/2 c. boiling water (208°F)

For Topping

  • 1 Tbsp. sugar
  • 1/3 c. heavy cream

Directions:

  1. 1. Fill Zojirushi water boiler & warmer with water and set temperature to 208°F.
  2. 2. In a small bowl, place 3 tablespoons of water, sprinkle an envelope of gelatin and let stand 1 minute to bloom.
  3. 3. In a medium bowl, place instant coffee, sugar, pour boiling water and stir until coffee and sugar dissolve completely.
  4. 4. Add bloomed gelatin from step 2 to the sweetened coffee and stir until gelatin dissolves completely.
  5. 5. Add cold water to the coffee mixture and mix well. Pour into a small glass container and refrigerate until firm, about 3 hours.
  6. 6. Dip bottom of the baking pan in warm water (not included in the ingredients list) for 20-30 seconds. Cut gelatin into small cubes, carefully scoop with a large spoon and distribute to serving cups.
  7. 7. Make the topping. In a small bowl, mix sugar into heavy cream. Top chilled gelatin with sweetened cream and serve.

Author's Notes:

Take-out Idea: Pack gelatin in a pre-chilled Zojirushi Stainless Steel Food Jar and take it with you to lunch. Pack your favorite single packaged coffee creamer to top it before serving.
